Before my love of coffee came my love of tea. Growing up my nanny and dad would always start their day off with a hot cup of tea and if I was lucky I could usually get them to make me one too. More cream and sugar than tea but still…

So when one of my favorite tea companies asked if I was interested in featuring two of their gift products in my holiday gift guide I couldn’t help but jump for joy and immediately say yes.

Mighty Leaf is a company I’m very familiar with. My husband loves the Mighty Leaf iced black tea that they serve at Nordstrom Cafe so much that he tried to hunt it down in the individual packs only to find out that it was sold in bulk. So what did he do? He chatted with the manager at the cafe and was able to purchase some for home right from Nordstrom.

Now I’m easy, I stick to the varieties of Mighty Leaf that I can find on store shelves.

I decided to have a little fun with my gift set and made some delicious shortbread cookies with the Bombay Chai tea. Not only were these cookies deliciously spicy from the chai, they were also perfect for dessert when I hosted a recent girls night in.

Plus they were VERY easy to make and took less than 15 minutes to mix together and put in the oven.

Bombay Chai Shortbread Cookies

  • 1 teaspoon cinnamon
  • 1 tablespoon pumpkin pie spice
  • 2 tablespoons sugar
  • 2 1/4 cups all-purpose flour
  • 1 bag chai tea leaves (if they’re whole leaf, crush them to make them finer)
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (softened, but still cool)
  • 1/2 cup confectioners’ sugar
  1. Preheat oven to 300 degrees.
  2. In a small bowl, combine the cinnamon and pumpkin pie spice until thoroughly combined. Remove one teaspoon of the mixture and, in a small separate bowl, stir it into the 2 tablespoons of sugar; set aside.
  3. In a medium bowl combine the remaining spice mix and chai tea with the flour and salt; set aside.
  4. In a large bowl, or the bowl of a standing mixer, beat the butter and confectioners’ sugar together until light and fluffy. Add the flour mixture and beat until the dough resembles wet sand, don’t over beat.
  5. Using your hands, press the dough together to form a ball then press into a shortbread pan, or square 8×8 baking pan lined with parchment paper.Make sure dough is pressed in evenly.
  6. Press the chai sugar mixture into the top of the dough (I usually reserve half of it to sprinkle on the cookies once I take them from the pan, but you can use as much or as little as you like). Bake for 30 to 35 minutes, until the top feels firm and the edges are golden.
  7. Cut into squares and enjoy!

    The cookies look so yummy! I usually drink my chai with milk and sugar. We eat it with Indian cookies called cake rusk but this would be great to try!
