This past week I hosted a fun Root Beer Float Party with my family and in celebration I decided to bake some root beer float cupcakes to go with our floats.

These cupcakes are simple and taste great! Plus they’re half the fat than if you made them from the box. Now that’s pretty awesome.

The whipped cream topping does start to melt pretty quickly so try to hold off on topping the cupcakes until just before serving.

  • 1 box chocolate cake mix
  • 1/2 cup applesauce
  • 3 egg whites
  • 1 1/4 cup water
  • 2 tablespoons root beer extract
  • whipped cream
  • paper straws, cut into 3rds

Preheat oven to 350 degrees. Prep cupcake pan with liners.

Mix together the cake mix, applesauce, egg whites, water, and root beer extract. Fill cupcake liners 2/3rds of the way and bake according the the box directions (about 18-22 minutes).

Let cool completely. Before serving, add whipping cream to the top of each cupcake and add a small paper straw.
