One of my favorite parts about Thanksgiving, besides the giving thanks and being with friends and family, are the leftovers. The delicious, tasty, easy to heat up and eat whenever you please leftovers. I love Thanksgiving leftovers so much that when I started writing up this post I realized that I had no Thanksgiving leftover recipes of my own. Because I just eat the leftovers as is! Or in a huge, Dagwood style sandwich.

Vanilla Chex Cranberry Pecan Bars

I love cereal. Like LURVE cereal. I could eat it for breakfast, lunch, and dinner. Too bad the husband doesn’t do breakfast for dinner. But that’s another story…

So when I received a few boxes of Vanilla Chex to try out in the mail I didn’t hesitate to jump in and indulge in a bowl (or two). And when my daughter saw what I was doing she demanded that I share. I almost didn’t.

I told her I was going to make something for our playgroup’s halloween party with them and her eyes got big. She was so excited to see what I was going to make. And I’m pretty sure I made her day when I showed her these Vanilla Chex Cranberry Pecan bars I threw together.

They were pretty darn good!

Cranberry Cream Scones

Whenever I need something quick and tasty for either breakfast or dessert I almost always go to scones. How can you not?

They’re super filling, very versatile and quick to throw together. You can put just about anything in a scone. Have some raisins? Throw them in! Down to a handful blueberries? Why not use those. And while your at it get some fun ingredients together for toppings. Cinnamon sugar, cream, powdered sugar icing, chocolate, strawberry jam… lots of options!

I also love that I can form the scone into any shape I want. I can make them into biscuits. I can cut them into small triangles or big triangles. I could even use cookie cutters to cut out shapes. And the best part about this recipe is that they not only taste super good on the day they’re made but they taste great the day after as well. The perfect companion to a cup of coffee or tea.
