Fall Is Almost Here: Apple Ginger Screwdriver Recipe

This refreshing apple ginger screwdriver is the perfect drink to cool down at the beginning of fall when the crisp hasn’t quite reached the air.

The kids are back in school, it’s almost the official start of fall, and mama’s happy for a few hours  of peace during naptime to get back to what she loves doing… creating! So in celebration I thought I would start first with a delicious cocktail for all of the other mamas (and dads) who might need to take a moment to themselves before, dare I say it, the holidays get closer. 

In this time between summer and the holidays, we love planning fun outings and get togethers and try and map out how the end of the year will be. And right now it’s almost time to start planning our annual apple picking trip! I cannot wait to make a list of all of the fun apple-filled recipes I want to try this year. I never know exactly what apples we’ll be picking so it’s fun to get some ideas for tart and sweet apple recipes.  Many which would go great with this delicious cocktail! 

Apple Ginger Screwdriver with apple garnish

Apple Ginger Screwdriver

  • 1.5 ounces Tito’s Vodka
  • 3 ounces Apple Ginger Juice
  • 1 Ripe Red Apple
  • Crushed Ice

In a cocktail shaker, add Tito’s vodka or a vodka of your choice, R.W. Knudsen Apple Ginger Juice and top with crushed ice.

Shake it, but don’t break it for 30 seconds.

Strain into a standard whiskey glass.

Garnish with an apple slice.

Serve and enjoy with friends.

Last weekend we headed out to enjoy the San Diego County Fair. While we were there, we enjoyed bites of our favorite fair foods, rode plenty of rides, played games, and enjoyed the rest of the sights and sounds of the fairgrounds. It was quite a fun adventure, as always, for our family and by the time we headed to the exit, we were exhausted.

But before we got to the gate, my husband spied the last place he wanted to stop. The cinnamon roll booth! It’s a tradition to grab a few cinnamon rolls to take home and enjoy the next morning as we reminisce about the fun we had the previous day. And it’s a way to continue to fair food fun. But this time he noticed something else on the menu, a root beer slush! And when I watched them make it behind the glass, I knew we had to try it at home. Because it was SO easy! Just two ingredients and we had a delicious, refreshing beverage to enjoy as a tasty treat after dinner during the hot days of summer.

Plus I can easily turn it into something that fits my LCHF lifestyle by substituting regular root beer for diet root beer. Win-win! And you could totally make this a boozy drink and add vanilla vodka or another delicious choice to the mix.

Root Beer Slush - great way to cool down!

Root Beer Slush

  • 8oz root beer
  • 1 cup ice

Blend ingredients in a blender – we love our Vitamix (affiliate link) – until it’s the consistency of a slush.

Optional: add 2 tablespoons of heavy whipping cream to create a root beer float slush. SO GOOD!

It’s unofficially summer (just 1.5 weeks until my son is out of school!) and the weather is starting to heat up across the US. Here in So Cal we’ve been heating up all spring. And the best way to cool down on a hot summer day is a delicious beverage.

Whether it’s alcoholic (look for the * next to the name for boozy drinks) or non-alcoholic, these drinks will be sure to hit the spot and cool you down this summer.

Peanut Butter Banana Oatmeal Smoothie

 As I quickly approach my due date (less than 4 weeks away!) I’ve started to look for quick and easy meals and snacks to make once baby gets here. With two other kids, both in school, this will be the first time I’ll have to be somewhere in the mornings to actually be wiht all three kids once my husband has to return back to work.

One of my go-to breakfasts for myself and the kids are smoothies. Not only are they quick to make, I can make sure that I pack in enough protein, fruits, and sometimes veggies to start the day off right.

Since I’ll be nursing, I knew I also wanted to incorporate oatmeal in the mix as well so I added some quick oats to my favorite peanut butter banana smoothie recipe to create the perfect smoothie to get me going.

The best part about this smoothie is that I always have all of the ingredients on hand.

Now normally when I’m trying to lose weight I’d include a fat free greek yogurt and 1% milk but because I’m not focused on losing weight, I stick with the full fat versions for the calories.

I do, however, save some calories with the inclusion of powdered peanut butter but regular peanut butter can easily be used as well.

Peanut Butter Banana Oatmeal Smoothie

  • 1 cup milk
  • 1/2 cup plain greek yogurt
  • 1/2 cup quick cooking oatmeal
  • 2 tablespoons powdered peanut butter
  • 1/2 to 1 banana (sliced)
  • 1-2 Sweet n'Low packets
  • 1/4 teaspoon cinnamon
  1. In a blender, add in all of the ingredients.
  2. Blend until banana slices are well combined with the other ingredients.
  3. Pour into glasses and serve!

Since I’ve skipped the sugar in a flavored yogurt I add in a packet or two of Sweet’N Low to the blender to add a bit of sweetness without the added calories.

A guilt free drink that’s the perfect way to start any day whether you’re a busy mom with a newborn or simply trying to watch the waistline.

This weekend I’m hosting bunco and that means 3 things: laughter, big winners, and alcohol. And even if I can’t partake, I can still make it fun for the gals coming over!

Whoever hosts bunco is in charge of dinner for the girls but I always like to add a little something special as well so I’m making a big batch of hot chocolate to put in the crock pot and adding a bit of Godiva chocolate liqueur to make things a little more fun.

Even though it is still very much summer temperature wise here in Southern California, September has always meant one thing for me… apple season! It’s the time all of the orchards up in Julian and the surrounding areas open up so that the public can come up and pick baskets of apples to take home with them and enjoy.

Last year we were lucky enough to take a trip back East to visit my husband’s brother and his wife in Boston. While we were there we were able to head out to an apple orchard and continue our apple picking tradition while on vacation.
