This time of year is filled with holiday baking in our home. And while cookies are usually center stage, I try and get in a few different goodies like these coffee truffles to balance out the dessert spread.
These truffles are also the perfect way to share your love of baking and making with friends and family! Simply grab a few tins and pack up some truffles to gift to those you love.

- 2 Tbsp . Irish Cream (optional)
- In a saucepan over medium heat bring heavy whipping cream to a boil.
- Reduce heat and add 2 oz. of the dark chocolate and all of the coffee flavored chocolate and stir until smooth.
- Remove from heat and stir in the pecans and irish cream.
- Let cool 10 minutes then place in refrigerator at least an hour so the chocolate sets up.
- Grate the remaining Dark Chocolate with a fine grater.
- Remove the chocolate from the refrigerator and form into 1 inch balls. Roll in the grated chocolate to coat and place on wax or parchment paper.
- Refrigerate until ready to serve. Take out about 10 minutes before serving.
