Kid Friendly Baked Caprese Chicken With Fresh Herbs from the Garden

Remember a few weeks ago when we were talking all things herbs and I showed how we made an indoor hanging herb garden? Well, our herbs reacted so well to our new Culligan Water filtration system that we’ve been able to utilize fresh herbs in the recipes we’ve been making.

Since my youngest has become obsessed with all things gardening, I thought it’d be fun to have her help me make a meal from start to finish wiht a few of the fun things we’re growing in both our hanging herb garden and outside raised beds. And this baked caprese chicken dish includes so many wonderful elements from what we’ve grown so far.

Kid Friendly Baked Caprese Chicken Printable Recipe

Baked Caprese Chicken

  • 2 chicken breasts, cut in half
  • 1/2 cup fresh mozzarella
  • 6 hothouse tomatoes, sliced
  • 9-12 leaves fresh basil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1-2 tbsp olive oil
  1. Lay chicken breast pieces in an oven safe dish and preheat oven to 400 degrees.
  2. Let your kids layer the salt and pepper, cheese, tomatoes, and basil over chicken.
  3. Bake chicken for 25 minutes or until bubbly and slightly golden on the top and chicken fully cooked.

Chicken Parmesan Bites – The Perfect Toddler-Approved Meal

These chicken parmesan bites are the perfect toddler-approved meal for busy weeknights! They come together in less than 30 minutes and pair perfectly with spaghetti and marinara sauce and vegetables. 

I have been trying to come up with healthy, fun dinners that my preschooler would be more interested in. Lately, all the kids want are carbs and sweets so turning a typical chicken dish into more kid-friendly meals is my goal. I’m pretty sure I’ve succeeded in that goal with the help of some inspiration from Lady and The Tramp. 

A craving for chicken parmesan hit when we were watching Lady enjoy a big bowl of pasta with Tramp and it hit me! Why not turn chicken parmesan into chicken parmesan bites!? Put a side of noodles and sauce on the plate and I had a meal that all of the kids would enjoy. Including the preschooler. Right? Right!

So the next night as we were watching Lady and the Tramp again for the 3rd time since receiving it to review, I plated up these delicious chicken parmesan bites for the kids to enjoy with a side of spaghetti noodles topped with marinara sauce and a scoop of broccoli florets. I placed the plates of dinner in front of the kids and they went to town! And the best part? I used only 2 chicken breasts to feed the whole family dinner. Isn’t that awesome? And budget friendly! Plus the kids will love helping put this meal together. 

Chicken Parmesan Bites 

  • 2 chicken breasts, cut into 1″ pieces
  • 4 tablespoons 1% milk
  • 1/2 cup all-purpose flour
  • 1 egg white
  • 1 cup Italian-Style Breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 teaspoons table salt
  • 1 teaspoon black pepper

Place chicken breast pieces in a bowl and cover with milk. Let soak for a few minutes while prepping the other ingredients. Place 1/2 cup of flour into a gallon size zippered plastic bags. Measure out 1 cup of breadcrumbs and place into a container with salt and pepper. Grate 1/2 cup parmesan cheese into the same container, stir to combine and set aside. Place egg white in a small bowl.

Take chicken and place in bag with flour. Shake vigorously until the chicken is well coated. Put coated chicken in the bowl with egg white and stir to coat chicken. Place bread crumb mixture in the bag you just used for flour. Put chicken back in the bag and shake again coating the chicken with breadcrumbs.

Heat oil in a skillet on medium-high heat. Add coated chicken to the pan and cook until golden brown, about 15 minutes. When chicken is cooked thoroughly remove from pan and serve with spaghetti and marinara sauce. Add some steamed veggies or a nice salad to make this a complete meal.

With St. Patrick’s Day around the corner I thought I’d take one of my family’s favorite quick bread recipes for Irish Soda Bread and turn it into a mini version to appease the kids. And these unique biscuits really hit the spot.

This Irish soda bread biscuit recipe is not only simple but can be made with ingredients found right in the pantry. And the results are just heavenly! Flakey, soft, and delicious. Especially with a schmear of butter. If you’re looking to start your day off with the luck of the Irish then this biscuit is for you!

Making Irish Soda Bread Biscuits with Kids

By taking our favorite soda bread recipe and turning it into biscuits, I’ve been able to teach the kids how to make quick breads and tips for adapting recipes based on our needs. It’s a great way to introduce kids to bread baking before jumping into yeast recipes. 

Another great part about sharing the baking experience with our kids is that we get to spend quality time together. I’ve found that I can talk about a number of different topics when we’re in the kitchen together that they may not have been as receptive to if we were talking in the car or around the dinner table. 

When the kids are doing something with their hands, they seem to keep the conversation going without any real prompting. It’s a beautiful thing! I find that these types of recipes are good for all ages. From toddlers to teens, you can’t go wrong with an irish soda bread biscuit recipe.

Irish Soda Bread Biscuits Printable Recipe

Irish Soda Bread Biscuits

  • 2 cups white whole wheat flour
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 tablespoons cold butter (diced)
  • 1/2 cup raisins
  • 3/4 cup buttermilk (see note if you don't have buttermilk)
  1. Preheat the oven to 375. If using stoneware, place stoneware in the oven while it’s heating up.
  2. Combine flour, sugar, baking soda and salt in a bowl. Work in butter by hand. Make sure to use your fingers to mix it into the dry ingredients.
  3. Add in the raisins and buttermilk and combine together with your hands. Pat out the dough and form into a disk about 1 inch thick.
  4. Divide the disk into 6 equal pieces and roll into 2-inch rounds. Bake at 375 degrees for 15 to 18 minutes.

If you do not have buttermilk, grab some low-fat milk and vinegar (I use apple cider vinegar). Combine 3/4 cup milk with 1 teaspoon vinegar. Stir and let sit for 5 minutes.

Robot Valentine Snack Idea - a simple and easy snack for any valentines party

Today I’m sharing how to make a cute robot valentine snack that’s perfect for a classroom Valentine’s Day party! Not only is it candy-free but it’s also something fun for the kids.

With a few simple supplies you can pick up from the store, and 30 minutes to assemble, these snacks are sure to be a hit. We’ll be pairing them with chocolate covered strawberries and fruit for my son’s class party on Valentine’s Day.

I was able to pick up just about everything at Target and assembled them all within 1/2 an hour. I printed out a simple valentine message and punched out a heart around the message. If you’re passing these out as valentines you can simply add your child’s name to the bottom of the message. The kids are sure to love these treats on Valentine’s Day.

Robot Valentine Snack

What you need:

  • juice boxes
  • mini raisins (I opted for the yogurt covered raisins and regular)
  • fruit rope
  • applesauce
  • glue dots or adhesive roller
  • plastic spoons
  • washi tape
  • sharpie
  • valentines (optional)

What you’ll do:

1. Using the glue dots, secure two raisin boxes to the bottom of the juice box. The raisins will be the feet and the juice box is the body.

2. Place the applesauce cup upside down onto the top of the juice box and secure with glue dots and/or washi tape (whatever allows it to stay on top). This will be the robot’s head.

3. Add a fruit rope to either side to create the arms

4. Tape a plastic spoon to the back of the robot body with washi tape.

5. Draw a face on the applesauce to add a little character to your robot valentine snack. Or glue on googly eyes and draw on a mouth.

I think I’m on a high. Still recovering from the Christmas cheer that spread throughout my house, family in town celebrating, and a fun weekend of even more celebrating in my near future. And, of course, smack dab in the middle of all of that is New Year’s Eve. The biggest party of the year, right?

We normally head over to my brother in laws house with appetizers and sparkling grape juice in hand for a kid-friendly NYE party where we celebrate ringing in the new year on GMT. We’re home by 6-7pm and the kids feel like they’ve gotten to celebrate the big countdown with their family and friends. But then my husband and I can enjoy a nice quiet meal together as we ring in the new year while the kids snooze.

Creamy Chicken Jalapeno Popper Dip

I try and keep things simple by making a few appetizers to enjoy instead of a large meal. I bring a larger version of the appetizer to the party while I save a small version for us to heat up later. We can munch together and watch the festivities on tv as we remember what happened in the years past. It’s a great way to connect. But it’s also a great way to try out fun recipes I haven’t had a chance to try out in the previous year. And this creamy chicken jalapeno popper dip recipe is one of them! The kids loved that I paired it with their favorite sparkling grape juice.

I first saw a variation of this recipe on my friend Melissa’s site and knew I wanted to try it. But I wanted to see if I could mix those flavors with my favorite “crack dip” recipe. Adding chicken to this dish not only took it up a notch but made it more acceptable as a replacement for dinner. I’ll enjoy mine with celery while the husband dipped in with crackers and tortilla chips!

Creamy Chicken Jalapeno Popper Dip

  • 2 8 ounce packages Kraft Philadelphia Cream Cheese, softened
  • 1/2 cup mayonnaise
  • 1 4 ounce can chopped green chiles, drained
  • 2 diced jalapeño peppers, seeds removed
  • 1 cup Mexican style Kraft Natural Shredded Cheese
  • 1 cup Mozzarella Kraft Natural Shredded Cheese
  • 1-1 1/2 cups diced cooked chicken
  • 1/2 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese

Preheat the oven to 375˚ F.  In a medium bowl, combine the cream cheese, mayonnaise, green chiles, jalapeños, chicken, and shredded cheeses.  Mix thoroughly with a spoon or spatula until smooth and evenly combined.  Spread the mixture into a baking dish (approximately 9 x 9-inches).

In a second bowl, combine the Panko and Parmesan and stir until combined.   Sprinkle over the cream cheese mixture in the baking dish.  Bake for 25 minutes or until the mixture is hot and the topping is golden. Broil on high for 30 seconds if it’s not as toasty on top as you’d like.

Serve warm with crackers, tortilla chips, baguette slices, vegetables, etc. as desired.

No Flour Monster Cookie Bars

  • 1 cup sugar
  • 1 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup peanut butter
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 cups Old Fashioned oats
  • 1 cup M&M'S®
  • 1 cup chocolate chips
  1. Pre-heat the oven to 350°F. Line a 13×9-inch metal baking pan with foil.

  2. Add all of the ingredients into the bowl of a stand mixer fitted with the paddle attachment,

  3. Cover bowl with dish towel and mix on lowest setting. Once mixed up a bit, increase speed and mix until all of the ingredients are combined. 

  4. Spread mixture onto prepared baking pan and bake for 30 minutes or until golden brown. 

  5. Take out of the oven and let cool for 5 minutes then transfer foil and bars to a cooling rack. Cut into squares and enjoy!

What you’ll need: 

  • 4 cups old fashioned oats
  • 1 cup brown sugar, packed
  • 1 cup white sugar

5 Ways to Make Potty Training Fun + Sweet Incentives

By removing the diapers from your home, you’re preparing for the potty training journey and removing any crutches.

Once your child has transitioned from Pull-Ups to underwear, you can do the same thing with your unused Pull-Ups. My daughter decided to gift our Pull-Ups to her 1 year old cousin (hence the bow on the package in the photos). She may be too young just yet but my daughter knows that all the Pull-Ups were given to her cousin and we don’t have any more in the house to use. 

4. Print, color, pose and post with a Potty Training Certificate –

Grab a Potty Training Certificate and print it out for your child. Let them color and personalize it, then snap a photo of them with it to commemorate the moment. You can do the same thing when they’ve successfully potty trained to commemorate their progress and their “graduation” into big kid underwear.  

5. Celebrate potty training success with sweet incentives – 

When your child has transitioned into Pull-Ups and starts to have accident free weeks, consider a sweet incentive to encourage them even more. We would use lollipops and other small prize rewards to give to our kids when they successfully went on the potty, when they had an accident free week, and finally, when they transitioned from Pull-Ups to big kid underwear, we celebrated with a Crazy Cake! 

Cakes mean celebrations for us and this Crazy Cake recipe is one that my husband’s family has been making for years. It’s a super easy recipe that the kids can help with AND it’s egg and dairy free. Most of the ingredients are staple pantry items. 

Chocolate Crazy Cake Recipe

Chocolate Crazy Cake

  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup vegetable oil
  • 2 tablespoons distilled white vinegar
  • 2 teaspoons vanilla extract
  • 2 cups cold water
  1. Sift dry ingredients together directly into a 9 x 13-inch ungreased baking pan.

  2. Let your child make three wells in the dry ingredients. Pour the oil into one well, vinegar into the second well, and vanilla into the third well. Pour cold water over everything and stir well with a fork.
  3. Bake at 350 degrees for 30 to 40 minutes, or until a toothpick inserted comes out clean.
  4. Frost with your favorite icing.

How to Make Chocolate Peanut Butter Crinkle Cookies Your Guests Will Love

If you’re looking for the perfect holiday cookie this season then look no further than these Chocolate Peanut Butter Crinkle Cookies! Your guests will love their small perfection. Plus they pair perfectly with milk, cocoa, and coffee! 

How was your Thanksgiving? We spent the day baking in the morning with the kids and then enjoying a wonderful meal with our extended family. It was perfect. One of the things we decided to bake up that morning to bring to dinner were these deliciously perfect chocolate peanut butter crinkle cookies. They’re small, bite-size cookies that aren’t too sweet so they were perfect to pair with the pies and enjoy with a cup of coffee or cocoa to drink. 

Normally we make chocolate crinkle cookies but this time my older daughter wanted to add something a bit different to them to change things up. The addition of peanut butter was the perfect touch and added a great flavor combo to these classic cookies. I may try adding a pinch of cinnamon next time too!

When making cookies with the kids I always try to measure everything out before we start mixing so they don’t just dump everything out without knowing what they’re putting in. It helps them to understand the quantities needed for each recipe. 

But one thing we are working on is adding one egg at a time while mixing so each can be incorporated before the other is added. The 2 year old prefers to dump them all in at once! 

This dough is a thicker dough that, once all of the ingredients are combined, form a ball in the mixer. This makes it easier to get out to refrigerate once mixed up. 

And I’ll let you in on a little secret. Even though the recipe does say to chill for 1 hour… I don’t always let it chill. I’ll divide the dough up into two halves and place one in the fridge but will start rolling out the other right away. 

This is a great cookie to make before guests come over if you’re looking for something little to nibble on. Or to give as gifts during the holidays because they’re small and do well in an airtight container. 

Chocolate Peanut Butter Crinkle Cookies

  • 10 tablespoons butter (cut into 10 pieces (1/2 cup plus 2 tablespoons))
  • 1 1/4 cups light brown sugar (packed)
  • 10 ounces bittersweet chocolate (coarsely chopped)
  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon teaspoon salt
  • 2 eggs
  • 1/2 cup peanut butter
  • 1/2 cup powdered sugar
  1. Put the butter, sugar, and chocolate in that order into a 2-quart saucepan. Put the pan over low heat and warm the ingredients, stirring occasionally, until they are melted and smooth. Scrape everything into the bowl of a mixer.

  2. Sift together the flour, cocoa, baking soda, and salt.

  3. Working with a mixer with a paddle attachment, add the eggs, one at a time, beating until the eggs are well blended into the chocolate. With the mixer still on low, add the dry ingredients, mixing just until the dough is smooth and shiny; it will clean the sides of the bowl and form a ball. Then add the peanut butter and stir in until just combined. Turn the dough out onto a work surface, divide it in half, wrap each piece in plastic wrap and chill for at least 1 hour. 

  4. Preheat the oven to 350°F and line two baking sheets with parchment paper.

  5. Working with 1 tablespoon of dough at a time, roll the dough between your palms to form firm, shiny balls. (If the dough breaks as you work, squeeze and knead it a bit, then reroll it between your palms.) Add to a small shallow dish filled with powdered sugar and roll in sugar until lightly coated. Place the balls about 1 inch apart on the baking sheets and lightly press each one down a bit with your thumb.
  6. Bake the cookies for 9 to 10 minutes, rotating the baking sheets from top to bottom and front to back at the midway point. The cookies should be delicately firm and crackled across the top. (It’s better to under- than over bake.) Remove the sheets from the oven, let the cookies rest on the sheets for 2 minutes, then, using a wide spatula, gently transfer the cookies to a rack; cool to room temperature.

  7. Repeat with the remaining dough, cooling the baking sheets between batches.

This pumpkin pie is great for those who may have dairy allergies. It tastes just like regular pumpkin pie but is made with coconut milk instead. And no, you can’t taste the coconut in the filling. Pair it with some coconut whipped cream and you are set for the holidays! This recipe is also perfect to use for mini pumpkin pies as well if you don’t want to make the whole pie.

Candy Apple Dump Cake {Fall Recipe}

This candy apple dump cake is perfect for last-minute desserts that bake while you’re eating dinner or for potlucks with friends and family.

One of my favorite fall pastimes to do before Halloween is apple picking with the family. Something about the cool crisp air, the delicious juicy apples right off the tree, and the smiles on my kids faces when they pick that first apple off.

But it doesn’t end at the orchard! Then you get to go home and bake yummy goodies with all the apples you managed not to eat on the drive back home.

When deciding what to bake with the apples we picked in Boston on our trip back a few years ago I knew I wanted to incorporate Halloween and the fun of the season. Since I had just recently stopped by Smart and Final for our Halloween candy stash I decided to incorporate the delicious Nestle goodies I picked up in this Candy Apple Dump Cake.

Once I got home it was time to start baking. Now, this candy apple dump cake is literally what the name alludes to. Chopped up candy, apples, cake, and butter all dumped into the pan, stirred up, and baked! So simple yet so delicious.

Since I purchased a few extra bags of candy to bake with I decided to chop up my favorite Nestle crunch bars and Nestle chocolate bars to add to the mix. The combo of the apples and chocolate reminded me of our favorite candy apples.

And the kids had a great time unwrapping the chocolate (one for you, one for me…).

Candy Apple Dump Cake ingredients

Candy Apple Dump Cake

  • 3 apples, 2 diced & 1 grated
  • 1 cup Nestle chocolate, diced (I used Nestle Crunch and Nestle chocolate bars)
  • 1 tablespoon pumpkin pie spice
  • 1 package cake mix
  • 1 stick (1/2 cup) butter, melted

Preheat the oven to 350 degrees.

Add apples and chocolate to a 9×9 pan. Sprinkle with pumpkin pie spice. Pour cake mix over apples. Drizzle melted butter over mixture.

Stir ingredients in the pan and smooth top.

Bake in the oven for 35-40 minutes or until top is golden brown and toothpick comes out clean.

Let cool 5-10 minutes before serving.

Add a big scoop of vanilla ice cream and a drizzle of melted Nestle Crunch bar for an added bonus!

How easy is that? Perfect for last-minute desserts that bake while you’re eating dinner or for potlucks with friends and family. And you can make this with just about any fruit! So depending on the season, pick out your favorite fruit and enjoy.
