It’s a few days after Easter and you’re still staring at the colored hard boiled eggs you made this weekend every time you open the fridge. Now what are you going to do with them??

This year we used some delicious, free-range eggs from the Happy Egg Co to dye up the day before Easter. Using a few of my Easter egg tips we ended up with some beautiful eggs that were quite a hit at our Easter brunch. However we still have a few lying around.

While it may seem like there just isn’t enough things to do with these delicious eggs, there are! Here are a few great ideas of what to do with hard boiled eggs after Easter.

Light Deviled Eggs

1. Light Deviled Eggs

A take on the traditional deviled egg recipe, these light deviled eggs are not only delicious but healthy as well! And they provide a great amount of protein to keep you full throughout the day.

Plus this is a great recipe to let the kids try. It’s quite fun to have them squirt the filling into the egg yolks once the mixture is made.

2. Egg Salad

Similar to deviled eggs, this classic egg salad from one of my favorite blogs, Brown Eyed Baker, can be a great and tasty sandwich for lunch. It can also be used to top salad or eaten as is.

Add your own twist and flavors to the recipe to make it even tastier!

3. Lasagna

Adding a bit of crumbled hard boiled egg to the layers of your favorite lasagna can prove to be a very tasty addition! My favorite place to order lasagna adds chopped hard boiled eggs to their dish and it’s out of this world!

Plus adding a bit of protein to a pasta dish never hurt anyone.

4. Cobb Salad

The traditional cobb salad is not only a delicious lunch option but filling enough for dinner as well! Consider using the whole egg or simply the egg whites if you’re watching your calories.

And choosing some turkey bacon over the classic bacon can also make this usually fatty salad even more slimming. I love this version from Skinny Taste and just can’t get enough of her tomato vinaigrette. Yum!

5. Bacon & Egg Flatbread

Get a little creative and think outside the box with this amazingly tasty Bacon & Egg Flatbread dish from Tonya of Create Celebrate Explore. Hey, I’ve seen raw eggs cracked on pizzas and baked before, why not start with a hard boiled egg?

This would make an amazing dinner paired with a delicious salad or even an appetizer at a party.
