Do you ever just get a craving for a meal you normally only have once or twice a year? This past week I was craving the classic flavors of Thanksgiving and couldn’t get it off my mind. So on our weekly run to Trader Joe’s I picked up some turkey breast tenderloins.
They looked almost exactly like the boneless skinless chicken breast I purchase only they were a bit larger. I figured I could simply use the flavors I love from turkey day and modify them a bit to create a tasty weeknight meal.
I’m so glad we went with recreating a classic holiday meal. Not only did it hit the spot but it gave me the opportunity to think outside the box when making dinner. I don’t think I’ll be sticking with just chicken breast when it comes to poultry now!
Herb Roasted Turkey Breast Tenderloin
- 3 tablespoons butter, cubed
- 1 tablespoon orange juice
- 1 tablespoon soy sauce
- 1/2 teaspoon dried thyme
- 1/2 teaspoon rubbed sage
- salt and pepper
- 1 pound boneless skinless turkey breast tenderloins
In a small saucepan, combine all ingredients except the turkey. Bring to a boil; remove from the heat and set aside to cool.
Place turkey breast on a rack in a shallow roasting pan. Brush some of the butter mixture over the top of the turkey.
Cover and bake at 325° for 35 minutes or until juices run clear and a thermometer reads 165°, basting 1/2 way through with butter mixture.
Let stand for 5 minutes before serving.
My favorite3 holiday meal is turkey and dressing. I haven’t quite figured out how to make the perfect dressing, like my grandma used to make. My sister is usually in charge of the Thanksgiving dressing since our grandma passed away. She does a great job, it is delicious!

There is something about a good meatloaf with mashed potatoes and corn! And yes, I stil mix my corn in my mashed potatoes – so yummy!
