I’ve come to love stepping outside of the box in the kitchen. Spicing things up figuratively and literally. So when I started to plan how I’d spice up a 2 ingredient chocolate cake I immediately thought to turn to nuts and honey as my inspiration.
Because what’s better than chocolate, hazelnuts, and honey? Well… maybe peanut butter but peanut butter is everywhere!
I have never roasted nuts on my own before from scratch (besides one time when I purchased an almond roasting kit from Target a few years back on clearance for Christmas gifts… but that doesn’t count because it was a kit!). I’ve heard it’s easy and figured I’d give it a go. Luckily it was easy! If you remember to watch the nuts closely so they don’t burn.
And these Spiced Honey Roasted Hazelnuts really did hit the spot when topped onto the cake.
Spiced Honey Roasted Hazelnuts
Ingredients
- 4 tablespoons Golden Blossom honey
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8-1/4 teaspoon cayenne pepper, depending on heat wanted
- 1 cup chopped hazelnuts
Directions
1. Preheat oven (or toaster oven) to 400 degrees. Prep pan with foil and non-stick spray.
2. Whisk together honey and spices. Then combine honey mixture with chopped nuts until the nuts are well coated.
3. Spread nuts in a thin layer on prepared pan. Roast in oven for 5-7 minutes, or until slightly golden. Remove from pan and place into a bowl to cool, stirring frequently so they don’t stick together. Enjoy as is or use to top your favorite dessert.

Matthew, this is so interesting! Have you ever seen a chrism recipe? For the Roman Catholics in this country, each archdiocese (I’m not sure about diocese) makes chrism during Holy Week at “Chrism Mass” A bottle of balsam bought from one of a few companies that make it in the USA is poured into olive oil Then it is blessed by the bishop with a prayer at the Mass It’s that quick and easy in true Roman style I must say the balsam smell is strong and beautiful! I’ve helped prepare the chrism oil for the service for several years now (Although never again, I will miss that fragrance that could last for days)

Those do look really good, if only hazelnuts weren’t so expensive! May have to try it with a cheaper nut.
They’d work well with almonds too!
