Sharing A Morning With Friends and Coffee-Mate + a Healthy Berry Muffin Recipe

Healthy Berry Muffin Recipe

Living in San Diego, we’re surrounded by the men and women who serve our country in the military. When I was growing up, my step-father was in the Navy and now my Brother In Law is in the Coast Guard.

Both grandpas and an uncle served as well. So while military life isn’t my life, it’s been with me since I was small. Now that I have children of my own and run a playgroup, I’m constantly meeting the wives of men serving in the military (some who have served themselves).

One very special military wife, my friend Nadia, is someone I hold dear. Not only does she keep me sane but she’s someone I’d call a true friend. The dedication and support she shows for her husband as well as the great way she’s raising her kids both awes and inspires me to do more.

And like friendships with those in the military, our ability to head over to one another’s house for a sporadic playdate is getting closer and closer to ending since her husband will be getting new orders soon.

Due to the looming d-day of her moving away, I want to get as much Nadia time as I can while she’s here. So I decided to bake up some delicious healthy berry muffins and have her and a mutual friend over for a mommy morning while the kids play.

Coffee-mate’s contribution helps Operation Homefront provide a wide range of support for military families. Coffee-mate has decorated their French Vanilla & Hazelnut liquid creamer bottles and their Original powder creamer in patriotic stars and stripes.

As the perfect accompaniment to our muffins, I had to grab some creamer for our coffee. So I headed out to Walmart to grab one. These bottles will only be available at Walmart from Memorial Day through Independence Day while supplies last.

It’s always a running joke with my girlfriends that they don’t eat or drink their morning coffee before coming to my house because they know they’re going to overindulge in both coffee and food before they head back home.

And I always make sure to have the good flavored creamer on hand. French Vanilla is hands down our favorite.

Nadia has been my recipe tester and has never turned me down when I call her up and let her know I have too many muffins, cookies, etc that I’ve baked for a post and need her to help me eat. I don’t know what I’ll do when she’s gone. I’ll have to start testing out mail-friendly recipes!

Healthy Berry Muffins

  • 1 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2 tablespoons canola oil
  • 1/4 cup unsweetened applesauce
  • zest of 1 lemon
  • 2/3 cup milk + juice of 1/2 a lemon
  • 1 cup raspberries
  • 1/2 cup blueberries
  1. Preheat oven to 325 degrees. Lightly grease muffin tin.
  2. Using zested lemon, cut in half and pour juice of 1 half into milk. Set aside. (you can also use buttermilk if you have it on hand)
  3. In a medium bowl, sift together whole wheat and all purpose flour, baking soda, baking powder, and salt. Set aside.
  4. In a second bowl, beat egg with sugar with whisk until smooth. Mix in vanilla, oil, zest, applesauce, and milk.
  5. Add wet ingredients to dry ingredients until just incorporated. Fold in berries. Don’t overmix the batter.
  6. Scoop mixture into muffin tin and bake for 18-20 minutes, or until a toothpick comes out clean.

 

I caught a little glimpse of our morning fun in the video below. TV blaring in the background, chatter in the air, and delicious food and drink… the perfect mommy morning.

The mornings we spend together as we let the kids enjoy a little playtime allow me to actually drink a hot cup of coffee before it turns luke-warm. Or ice cold like most days.

I can open up and chat about just about anything without worrying about being judged or talked about. I am myself with Nadia and know that her life is just as crazy as mine. She gets me. And I get her. That’s what friendship is about.
