One of my favorite memories of fall growing up was when my mom would make pumpkin seeds. She’d bag them up and put them in our lunches or just have them out for an after school snack and they were so good! So I knew it’d be a fun thing to make with my kid this fall. 

After we gutted (or shall I say I gutted) our pie pumpkins we discarded the stringy mess and saved the yummy seeds. I knew this would be a great snack for me to munch on as we made our way to Halloween. You know, so I’d stay out of the candy 🙂

The seeds were yummy and just a little salt went a long way! I’m hoping to use some to top pumpkin muffins or pumpkin bread if I get the chance to make it.

Pumpkin Seeds

  • Pumpkin seeds (cleaned and dried off)
  • salt (to taste)
  1. Preheat oven to 325.
  2. Lay out pumpkin seeds in a single layer on an un-greased rimmed cookie sheet.
  3. Sprinkle with salt and bake for 25 minutes.
  4. Take out of the oven and let cool.

Make sure you watch you little one or else they may try to come up and steal some while you aren’t looking 🙂 I caught my little guy doing exactly that…

Apple Picking in Julian

Apple picking in Julian is the perfect family tradition to share with your kids! Make a weekend of it and get a room at one of the B&Bs up in Julian or simply make a day trip out of it.

I have been wanting to go apple picking in Julian for quite a while. I’ve always heard great things about it and when the end of summer hit I knew I needed to plan a weekend day of apple picking with the family.

We were planning on going on Saturday but work got in the way and Joseph had to go in and work on a large project until 4 pm. So we pushed our apple picking adventure to Sunday after church. We went to 8:30 mass at Joseph’s old high school and were surprised to find out that they were hosting an event for the parents/kids of the school shortly after mass so the priest skipped the homily to get us out faster. Now I wouldn’t say this in front of the little one but SCORE! This means we’d be on our way to Julian sooner.

So as soon as mass was over we headed on our way. Julian is about 1 hour and 15 minutes away from us so it’s not too far but just far enough to make an 18-month-old a little cranky. And of course, my son didn’t want to nap on the way up. He might miss a cow or a horse out the window (which he was in search of since his first spotting). When we got to Raven Hill Orchard he was ready to go!

As soon as he realized that we were picking his favorite fruit, he was completely on board. He consumed about three small apples in the time we were picking, and one on the way to Julian. I think his favorite thing to do was “wash” the apples on Daddy’s pants and then take a huge bite to see what each apple tasted like. He tried Jonathan apples, Gala apples, and Empire apples.

At Raven Hill, you pay $10 a bag and happily pick until your bag is completely full. We also ate along the way so really we got a snack and a bag of apples for $10. Totally worth the money.

Afterward, we headed to Julian for an apple pie (yes, I’m sure I’ll make one with the apples we picked but nothing beats a Mom’s apple pie!). And then made our way to Dudley’s Bakery for sandwiches and more goodies. Joseph was hoping for some good sugar cookies but was disappointed to find a very small selection of cookies in their bakery. Mostly pastries and bread were sold there.

BUT the sandwiches we got were MASSIVE and delicious so they definitely made up for the lack of cookie selection. And the little one was happy because he got chips, a grilled cheese sandwich, pickles AND a piece of Daddy’s chocolate chip cookie. By the time we got in the car he was passed out.

Such a great family day 🙂 I hope to make this a tradition… our next fall family day will be to pick out pumpkins and squash at Bates Nut Farm in October!

Adventures in Toddler Food: Veggie Bites

My son has been pretty bad at eating his veggies lately. With the vast fluctuation day by day of his appetite we have had very little luck getting the greens in him. He’s much more interested in the colorful fruit we’ve been bringing home this summer. A little too interested…

So I went out in search of a good veggie bite recipe and found a lot online. I got bits and pieces from a lot of different recipes and kinda pieced them together to form this one. And I am quite happy to say that it was a recipe he loved.

Mammoth Family Trip: Day Five

All in all our first family vacation was perfect. It wasn’t Hawaii but it was such a fun time. We got to bond and play for 5 full days. With Daddy working E only sees him at night and on the weekends so being with him for this long was really a joy.

I was so nervous about the driving and during parts of our trip being in the car really sucked but all in all E was a trooper and did great. I can’t wait to see where we’re going next year!

My breakfast skillet. Sooo good!! And I got a side of biscuits and gravy instead of home fries. I ate all the biscuits and gravy and 1/2 of the skillet… definitely a hearty breakfast!

The faultline… multiple earthquakes caused this fault and it was pretty cool to explore. There was even snow on the ground still in some shaded areas.

Mammoth Family Trip: Day Two

For our second day in Mammoth we planned on checking out some local sights and taking a hike or two. So after feeding the fish (again) we headed out to the bus station where they take you to Devil’s Postpile & Rainbow falls.

We got an 11:30 bus and they drove us through the area. It was beautiful and the wind felt great. E fell asleep on the bus but luckily I had him in the Ergo so it wasn’t too hard getting up and off. We started hiking to Devil’s Postpile and just as we got there E woke up! Perfect timing!

We took a few pictures and looked around the area. We let E eat some snacks and drink some water as he explored. He loved watching the birds, squirrels and other wildlife. And he especially loved the water.

So much fun!!! BTW… the ladies in the background were super nice and friendly with us. They had E laughing so much. They were in the middle of getting pictures taken out there and were “icing” their knees and ankles. They played sports and had all sorts of injuries (I’m definitely familiar with that!).

A small hike in our backyard meadow (not even a quarter mile from the door of the condo) was a fabulous way to end our afternoon. We saw more wildlife and enjoyed the sound of the creek that ran through the meadow.

E LOVED hiking and looked so proud every time I looked back to snap a picture. He really is a little man now!

After our meadow walk we decided to go out and grab a bite to eat. MMMMM!

YUMMY buffalo burger from Burgers in Mammoth… if you go up you have to try this place 🙂 I fell in love with their bbq sauce (homemade… yes, I asked) and almost asked to buy some to take home but they didn’t have it jarred.

E sharing our milkshakes. They were kind enough to split one big milkshake into two manageable ones so Joseph and I could both partake (and switch off sharing with E).

After his busy day he was exhausted! Isn’t this bed cute??? It was built into a little nook in the wall and they even had a side protector so E wouldn’t fall out. Too bad I left my pillow (the one E’s sleeping with) at the condo 🙁

Mammoth Family Trip: Day One

We began our journey a bit off schedule. I had asked Joseph if we could leave super early so E would sleep most of the way and we wouldn’t throw him off his schedule too much. But my loving husband chose sleep over leaving early…

We rushed to get everything into the car and than went to change E’s diaper and clothes for the ride. We realized we didn’t have the snappi for E’s prefolds. And I needed that snappi… Prefolds were what I was counting on as my main diaper source while on vacation since we have more of these than any other type of diaper.

With a phone call to Grandma Ann we found the snappi and made a detour before hitting the road. Once we had our snappi in hand it was off to the 15 north!

About three hours into our drive I was starving and E needed a break so we stopped by a Denny’s even though Joseph doesn’t quite care for it 😉

I didn’t realize how much this magna doodle would save us on this trip… it kept E entertained for each meal at a restaurant. We now plan on bringing it to every restaurant no matter what looks we receive from other restaurant goers. Much better than a screaming child and a cold meal!

E kept us entertained on the whole way up… he made funny faces and learned lots of new words (see the left hand side of the blog to see all his new words!)

And finally a glimmer of light in our long journey! Food! We stopped at Schat’s Bakery for a sandwich, some cookies (ok… for those who know Joseph… lots of cookies) and a few other pastries.

E even got a pony ride!

When we started to see snow on the mountains we knew we were close!

We finally arrived at the condo that Joseph’s Aunt Louise graciously let us stay in and E was ready to explore! Luckily there was a pond filled with fish right outside the screen door ready for him to play with. And, as we found out later in our trip, there was even a bigger pond just beyond this one with DUCKS!

We were so exhausted after the drive that we may have passed out at around 8:30…

Sneak Peek of our First Family Trip

This is the view from our condo… About a quarter mile past the small pond (with fish!) is a big pond with fish and ducks. There’s a meadow with intertwining creeks and lots of fun for a 17 month old. We’ll have more pictures when we get home.

Today we went to Devil’s Postpile and tomorrow we head for Yosemite’s Bridal Veil Falls (plus fun stops along the way). We’re still figuring out what to do Monday but we have time! Loving every minute of this fun vacation.
