I think I’m on a high. Still recovering from the Christmas cheer that spread throughout my house, family in town celebrating, and a fun weekend of even more celebrating in my near future. And, of course, smack dab in the middle of all of that is New Year’s Eve. The biggest party of the year, right?

We normally head over to my brother in laws house with appetizers and sparkling grape juice in hand for a kid-friendly NYE party where we celebrate ringing in the new year on GMT. We’re home by 6-7pm and the kids feel like they’ve gotten to celebrate the big countdown with their family and friends. But then my husband and I can enjoy a nice quiet meal together as we ring in the new year while the kids snooze.

Creamy Chicken Jalapeno Popper Dip

I try and keep things simple by making a few appetizers to enjoy instead of a large meal. I bring a larger version of the appetizer to the party while I save a small version for us to heat up later. We can munch together and watch the festivities on tv as we remember what happened in the years past. It’s a great way to connect. But it’s also a great way to try out fun recipes I haven’t had a chance to try out in the previous year. And this creamy chicken jalapeno popper dip recipe is one of them! The kids loved that I paired it with their favorite sparkling grape juice.

I first saw a variation of this recipe on my friend Melissa’s site and knew I wanted to try it. But I wanted to see if I could mix those flavors with my favorite “crack dip” recipe. Adding chicken to this dish not only took it up a notch but made it more acceptable as a replacement for dinner. I’ll enjoy mine with celery while the husband dipped in with crackers and tortilla chips!

Creamy Chicken Jalapeno Popper Dip

  • 2 8 ounce packages Kraft Philadelphia Cream Cheese, softened
  • 1/2 cup mayonnaise
  • 1 4 ounce can chopped green chiles, drained
  • 2 diced jalapeño peppers, seeds removed
  • 1 cup Mexican style Kraft Natural Shredded Cheese
  • 1 cup Mozzarella Kraft Natural Shredded Cheese
  • 1-1 1/2 cups diced cooked chicken
  • 1/2 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese

Preheat the oven to 375˚ F.  In a medium bowl, combine the cream cheese, mayonnaise, green chiles, jalapeños, chicken, and shredded cheeses.  Mix thoroughly with a spoon or spatula until smooth and evenly combined.  Spread the mixture into a baking dish (approximately 9 x 9-inches).

In a second bowl, combine the Panko and Parmesan and stir until combined.   Sprinkle over the cream cheese mixture in the baking dish.  Bake for 25 minutes or until the mixture is hot and the topping is golden. Broil on high for 30 seconds if it’s not as toasty on top as you’d like.

Serve warm with crackers, tortilla chips, baguette slices, vegetables, etc. as desired.

Cranberry Mustard Sauce Paired With Crispy Chicken Strips

My son. He’s addicted to chicken strips. Has been since he was younger. It’s the one thing he asks for in restaurants, something I always know he’ll eat when we are hosting an event, and is something I make for him when we eat lunch together on the weekends. But sometimes plain crispy chicken strips – while great for him – are just boring for me.

So I wanted to try something new to spruce them up. And in the spirit of the holidays, I decided to mix a classic Thanksgiving flavor with dijon mustard to create a cranberry mustard dipping sauce. Not only is it flavorful and pairs perfectly with chicken strips, it’s also a great spread for sandwiches and burgers as well!

We whipped this up before we headed off to watch a screening of The Peanuts Movie. We’d already primed them by watching some classic Peanuts movies we had in the house but to be honest I think we were more excited to see the movie than they were. I’ve been waiting for this release for a while!

Tyson® crispy chicken strips are so awesome for a quick pre-movie meal. They’re easy to make and take no time to bake in the oven. And paired with the cranberry mustard sauce, we made the kids lunch something even the adults could enjoy. It was the perfect lunch for the whole family and the kids loved chatting about what we were going to see before heading off to the theater.

Cranberry Mustard Sauce

  • 1/2 cup Cranberry Sauce
  • 1 1/2 tablespoons Dijon mustard
  • 1 tablespoon brown sugar
  • Tyson® Crispy Chicken Strips to use to dip

Combine ingredients in a small mixing bowl, whisking until smooth. Serve as a dip withTyson® crispy chicken strips or use as a spread on your next turkey or chicken sandwich!

I love Mexican food. Like LURVE it! So when I was asked to create a delicious dish inspired by the new Taco Bell sauces my mind started to go into a thousand different directions before I found the inspiration to create this creamy tomatillo avocado sauce.

What I love about this sauce is that it pairs perfectly with my tequila lime pork tacos. The tomatillos and green chilies in Taco Bell’s salsa verde match the flavor combo found in my tequila lime marinade. And how can this pork not taste amazing coated with this creamy sauce and nestled into a tortilla of love.

I’m all about the appetizers and desserts this time of year. The one thing I always love to make for guests is a hot dip to enjoy and warm up to. And my dips almost always include Philadelphia cream cheese. Because who can say no to that creamy goodness? It’s no secret that I absolutely love appetizers! When I host friends and family over I want to feed them. This homemade tzatziki dip recipe is not only delicious, it’s the perfect alternative to higher calorie dips and tastes great on everything.

Healthy Ranch Yogurt Dip {Snack Recipe}

Yogurt Ranch Dip

My family is absolutely obsessed with ranch dressing. If the kids have veggies, they want to dip them in ranch. So I’ve tried to change up the way we make ranch and have ditched the sour cream!

Now sour cream isn’t bad. I love the stuff. But by swapping out sour cream with greek yogurt I not only am cutting calories but I’m increasing protein! All in all I’m very excited about the swap and the kids can’t seem to tell the difference.

And Greek yogurt can be subbed for more than just sour cream. I also swap it out for mayo in some recipes.

Yogurt Ranch Dip ingredients

Ranch Yogurt Dip
  • 1 cup greek yogurt
  • 2 tablespoons ranch mix (see below for ranch mix)

Mix ingredients together until well combined. Let sit in the fridge overnight. Serve with your favorite veggies or chips.

 
Ranch Dip Mix
  • 2 tablespoons dried parsley
  • 3/4 teaspoon ground black pepper
  • 1 teaspoon seasoned salt
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon dried thyme

Combine ingredients and store in an air-tight container for up to 3 months. Feel free to double or triple and use as needed.
