Grilled Steak Sandwich with Garlic Aioli Recipe

Grilled Steak Sandwich with Garlic Aioli Recipe - a simple and easy meal perfect for tailgating!

It still very much feel like summer here. And that means I do not feel like cooking. So this weekend as we watched a little football we grilled up some steak sandwiches to munch on.  Since I didn’t want just a plain steak sandwich I decided to make a delicious roasted garlic aioli to give the sandwich more flavor.

While the barbecue was heating up to 400 degrees I put some garlic heads in some foil (bottom sliced off) with a good amount of olive oil. I sealed the foil and added it to the barbecue.

The garlic roasted while the steaks cooked and continued cooking while the steaks rested and took about 20 minutes to cook. Everything else went quickly after the garlic was ready. And everything was done on the grill! Well… except the salad. But you can always grill your salad next time.

The Ultimate BLT Sandwich plus Tips on Cooking Bacon

Ultimate BLT Sandwich with Avocado Ranch Spread

There’s one word and one alone that can describe why my family can’t completely kick paper towels. And that word is BACON! While I can clean my counters with cloth rags, use cloth napkins at the dinner table, and dry my hands off with a kitchen towel, nothing compares to using a paper towel to drain and cool off.

My family is pretty obsessed with bacon and we always seem to be cooking more up. With the kids starting to demand bacon on a more regular basis I needed to figure out how to streamline the process but still end up with delicious, slightly crispy bacon for the family.

And, of course, create a deliciously simply BLT sandwich while I cooked up my last batch of bacon. Complete with an avocado ranch spread that really hit the spot.  [Read more…]

Mini Pulled Pork Sliders

mini pulled pork sliders

I don’t know what it is about slow cooker pulled pork but it’s one of my absolute favorites to make! From root beer pulled pork, to coke pulled pork, to regular old spiced up pulled pork like this one, a pulled pork sandwich is definitely comfort food in my home.

And if you don’t have time to make homemade buns, simply grab some slider buns from the grocery store and enjoy some mini pulled pork sliders like these. Don’t forget the dill pickles on top though. They definitely add something to this delicious meal.

This meal is perfect for the family or for parties when you have lots of people over. And the leftovers (if there are any) can easily be incorporated into other dishes throughout the week. [Read more…]

How to Make a Panini Without a Panini Press

Make a Panini without A Panini Pres

A few weeks ago I posted about my shopping trip to Walmart and the I Can’t Believe It’s Not Butter!® light spread I picked up. I was able to use an awesome website called It’s Good To Know and found some great recipes that used I Can’t Believe It’s Not Butter!® in them.

Since then I’ve made a few dishes and have incorporated our secret ingredient -I Can’t Believe It’s Not Butter!® – without any fuss from my husband. His favorite recipe so far has been a simple panini I made for him and the kids for lunch one day. And we don’t have a panini press.

Being able to use the I Can’t Believe It’s Not Butter!® spread instead of butter has made these paninis even easier to make! No crumbs everywhere or hard, cold butter stuck to one corner and not budging. Just smooth, easy spreading! If you’re interested in finding out how you can make a panini without a panini press check out my YouTube video tutorial below.

The kids like to call them “fancy sandwiches” and love that I can switch up the ingredients inside to make different combinations. Served with a tasty side of veggies or a nice garden salad and it’s the perfect healthy meal! Plus it takes less than 10 minutes to prepare!

The Ultimate Grilled Cheese Sandwich Recipe

One of my favorite all time lunch (or dinner) option is a grilled cheese sandwich with a bowl of creamy tomato soup. My favorite menu item on Nordstrom Cafe’s menu is, of course, the grilled cheese & tomato soup and it’s my kids favorite too (the sandwich, not the soup).

So when I heard that national Grilled Cheese day was coming up this week I knew I had to share my favorite way to prepare grilled cheese at home. Yup… I’m sharing the ultimate grilled cheese sandwich recipe with you!

Now the components of a grilled cheese are simple, a spread on teh outer layers of bread to brown, some yummy cheese and a pair of bread slices to hold the cheese in.

You can change up the type of cheese and type of bread to reflect what you love the most but I always go with at least one cheese that’ll melt well. And I usually use two different types of cheese.

Curry Tuna Melt {Lunch Recipe}

Every Friday during Lent I scramble for a great alternative to our usual meat filled lunches. Usually I have a salad with grilled chicken and I make the kids a sandwich, leftovers, etc. But in an effort to stick with meatless meals I turn to fish to make sure my kids are getting the protein they need.

I’ve recently been really lucky with my garden and have a great supply of celery, green onions, and cilantro. So I’ve tried to find various ways to use them up. I started to think of what cuisines uses these different ingredients and how and immediately I thought of Indian food. So I grabbed some curry powder, picked some veggies from the garden, and started mixing.

What I ended up with was a delicious dish that is sure to make any boring lunch into a great one. The kids even enjoyed it and split one amongst themselves. They were even more excited about the fact that we used the veggies from our garden to make the sandwich.
