Once my kids were eating meals with my husband and I, we really had to think twice about what we were serving. I mean it’s one thing for my husband and I to eat a little un-healthy but the kids? They deserved well-balanced, nutritious meals 3 times a day.

I started to come up with quick and easy recipes for those nights that I just didn’t want to spend cooking and was surprised with how easy it was to incorporate healthy eating into our lives without spending tons of time prepping and cooking.

With the help of one of our family’s staples, whole-grain brown rice, I can jump in the kitchen and make some delicious favorites for the kids without worrying if they’ll actually enjoy it.

Dinner can sometimes be quite the chore for our family. Not only do we have children with limited palates right now, we also seem to forget to plan ahead lately and end up scrounging around the cupboards and fridge for a quick, healthy meal everyone will love.

Luckily I have a few tricks up my sleeve recipes to fall back on that are also kid-friendly. These homemade chicken nuggets are not only tasty but healthy as well. They’re pan fried in a little bit of olive oil and served with delicious brown rice and steamed veggies.

Using the slow cooker during the week not only saves me time in the evening but can also be a cost savings to us as well!

I can stock up on our favorite meats and veggies and throw them in the slow cooker in the morning without having to thaw them. What I’m left with is a tasty dinner to serve to my family.

One of our favorite slow cooker meals is pulled pork. Not only can we enjoy the pork on a pulled pork sandwich, but we can also use the meat for enchiladas, casseroles, and more!

The best part is that all you put in the crock pot are two ingredients.

Spring is here! And that means Easter is right around the corner. Easter has always been a favorite of mine. The excitement of new Easter dresses, the resurrection of Christ, and lots and lots of candy!

Ok… what holiday doesn’t come with lots of candy?

My second favorite Easter candies, besides Peeps, are Cadbury Eggs. And they have these cute little Cadbury mini-eggs that are just as tasty!

Topping these Easter egg basket cupcakes with the Cadbury mini-eggs were just the right thing to do! Much tastier than jelly beans. And? These only took like 10 minutes to assemble!

I’ve mentioned before about how I’m just not that into sports but with basketball it’s a little different. For one, I actually get the game more than football. And my college basketball team was decent.

And since my Aztecs from San Diego State were in March Madness last year I’m hoping to see them again this year! So in support of the guys in black and red I made these adorable little basketball player cupcakes.

Homemade Cinnamon Raisin Oatmeal recipe on spoonI love oatmeal. The hearty rich taste that keeps me full until lunchtime paired with the never-ending possibilities of flavors and creations you can make with it. Plus, it takes about 5 minutes to make on the stove top. And homemade tastes way better than the packets.

This cinnamon raisin oatmeal is my answer to a craving for a cinnamon raisin bagel. And I just didn’t have enough time to make those! The perfect amount of sweetness and the deliciously tasty raisins that plump as they cook in the oatmeal. This is definitely the perfect spoonful for breakfast.

Getting Creative with Recycling Plastic

Since having children, my family has become very active in recycling and teaching ourselves how we can better protect our planet. With these steps to becoming more eco-friendly we’ve found ways to make recycling plastic fun!

My kids know to think before they throw anything away and they check our fridge for what they can and cannot recycle. What they check is this awesome key to what we can put in our blue bins and where we put everything else.

And we’ve made it a bit fun for the kids by having sorted bins on the side of our blue bins for everything else.

Before our son was even born my husband and I began discussing college savings for him. Coming from a family where I was expected to pay my own way through school and having a husband who was lucky enough to have parents who were able to save up for him made us both realize how important it was to tackle this issue early on.

Easter is right around the corner. And in our house that means one thing… Peeps are here!

I remember getting Peeps chicks in my Easter basket every year as a child. And when I had kids I wasn’t quite sure if I should continue the tradition. For the past 3 years I simply gave my son a chocolate Sees bunny instead. But this year I think he’s ready to graduate to Peeps.

But Peeps aren’t just for the Easter basket! They’re also very fun to get creative with. And this weekend we made Peeps Rice Krispie Treats also known as Rice Krispie Peeps. And yes, they’re super good!

Homemade Waffles Recipe

Homemade Waffles

Our family absolutely loves waffles. It’s about the only breakfast item I can get my husband to eat with us on the weekends and it’s my kids go-to choice on the weekdays. Most of the time I do admit to using Trader Joe’s baking mix. It’s fast, simple, and tastes good. But sometimes I get a hankering for homemade waffles.

This recipe is easy and I usually have most of the ingredients on hand. When I don’t have buttermilk I simply add some apple cider vinegar to milk and let it sit for about 5 minutes. I give it a good stir and than use it as I would buttermilk.

Since our family of four still can’t eat a whole batch I make up everything and freeze the extras for a quick breakfast I can pop in the toaster for the kids. It’s simple and costs less than purchasing the frozen waffles at the store.
