One of my favorite dishes to make is lasagna. But because it’s loaded with delicious calories and carbs I tend to make it only 2-3 times a year. But with a few changes I’ve made my favorite dish slightly more forgiving on the calories. This turkey and zucchini lasagna is flavorful, easy to prepare, and worth every extra point I used on it!

My original plan was to use the zucchini as noodles but I didn’t find enough good looking zucchini to do that so that plan will have to wait. And if you try this with my bolognese sauce (recipe to come) I just know you’ll fall in love with this dish.

I think the best part of a lasagna is the re-heating factor. We made enough to serve 6 so we had lunch for the rest of the week! It tasted fabulous heated back up in the oven or the microwave.

I don’t know if I’ve said it enough but I absolutely adore coffee. I love it so much that I have a cup of it every day. But sometimes… just sometimes… I have a delicious latte instead. And I’m going to teach you how to make the perfect latte at home just like I do.

Now the delicious beverage you see above is, in fact, made from my Tassimo home brewing system. BUT you CAN make this same delicious latte at home without a single-cup brewing system if you don’t have one.

And this latte above has one thing my Tassimo doesn’t – a delicious vanilla cinnamon simple syrup that you can use in lattes, coffee, and anything else that needs to be sweetened.

I have to admit… this past week has been hard! Not only have I tackled the kitchen organization I’ve also taken the time to clean as I go so it’s been consuming more time than originally planned. But I managed to successfully organize the kitchen in three days.

As I outlined before, I started with the cupboards, worked my way around the countertops, and organized and cleaned out the fridge and the pantry. Not only did I get rid of things I didn’t need, I also made a pile of things to give away. Items we no longer use but were still functional or didn’t expire for a while.

Be the Change You Wish To See with Community Action

About a year and a half ago I received a flyer on my door step. Other community members were meeting up together to see if they could receive the proper approval to put in a community garden on a plot of land in our neighborhood. Seeing that I had just started my own garden bed I was very interested in hearing what their plans were and what needed to be done to take the right steps forward.

Having a community garden is not only something that’s wonderful for the person who owns a bed but for the community as a whole. It takes a deserted piece of land and brings beauty. It takes a community of individuals and creates a family. I headed out to that first meeting not knowing what to expect. But over the next few months I found myself as a member of the Community Garden Steering Committee and an active member in my community as well.

Healthy Breakfast Ideas for Kids

One thing I am passionate about is trying to instill good eating habits in my children as they grow older. Offering healthy alternatives, choosing the best meals for my children, and overall choosing to educate them on how they can make better choices themselves.

Don’t get me wrong… they’ll probably choose a french fry over veggies any day but give them the choice of an apple and a french fry and it could go 50/50.

And I’m not saying I’m perfect. We do eat out about once a week at either a restaurant or fast food place and the children do consume greasy, fatty foods that are horribly bad for them but oh-so-good. But we do spend the majority of our meals at our dining room table. Together as  family enjoying the food before us.

Most meals are actually prepared together. Because I find importance in getting the kids involved with tasks they can do for their age. Once they start to get involved they become much more interested in the foods they’re eating. And you’d be surprised at how many new things my kids have tried simply because they’ve helped prepare the dish.

Not only is this compote the perfect topping for the whole grain waffles pictured above, it’s also a great filling for cupcakes, tastes fabulous mixed in with a little creme fraiche and topped over a nice dark chocolate mousse, and does fabulous things to an angel food cake.
