When my son was a toddler I thought he was the pickiest eater. Then I started to realize that he wasn’t picky, he was just a kid. So I started to focus more on creating a family table at meal time and truly allowing him (and now my daughter) to experience food differently.

With the changes we’ve put in place I not only have kids who eat dinner, even if it’s just one part of dinner, we also now have a place to sit and talk about our day as a family. Mealtime now sometimes leads to playtime afterwards when the conversation doesn’t stop and the kids request either a game or movie night after we eat.

Salad In A Jar IdeasEven though I work from home, I need something quick and easy for lunch or else it’s 3pm and I’ve realized I haven’t eaten since breakfast. So when I saw a few salad in a jar ideas I knew I had to create a few of my own.

So when Fresh Express sent out a few coupons for me to test out their salads and partake in their 30-day Salad Swap challenge. Basically the challenge is to take mealtime favorites that are higher in calories and swap them for a delicious, lighter salad creation.

I just took the challenge one step further and put my salad creation into a jar for easy access and easy storage. Now I just have to grab a salad from the fridge and chomp away as I work without actually having to prepare anything! Win-win.  [Read more…]

While our community garden has brought our community together through growing food, it stays together as we share meals with one another and truly get to know each other. So when I considered how I could give back to my fellow gardeners, I thought it would be wonderful to share our first meal of the growing season together with a delicious Hash Brown recipe.

I invited all of the plot renters/growers to meet my family and me at the garden for a nice meal we could share. It would be the perfect excuse to get together between our community garden meetings and chat about more than what we’re growing. Plus I’d do all the cooking and clean up! Win-win, right?

By sharing these meals with one another we are truly growing communities and establishing strong roots in our neighborhood. I couldn’t imagine not having these wonderful people in our lives.

There were some flavor combos that were just meant to be together. And most of my favorite combos always revolve around chocolate. So weird, right? So when I heard I could make a 2 ingredient chocolate cake I was kind of skeptical. But totally on board!

So I picked up some Nocciolata (you can purchase it here on Amazon) that was sent over to me for review and decided to jump in and try this 2 ingredient chocolate cake. All you need is Nocciolata hazelnut spread with cocoa and milk and eggs!

The outcome was delicious. I waited for this cake to completely cool, topped it with some delicious spiced honey roasted hazelnuts and a drizzle of Golden Blossom Honey. It definitely hit the spot. [Read more…]

I’ve come to love stepping outside of the box in the kitchen. Spicing things up figuratively and literally. So when I started to plan how I’d spice up a 2 ingredient chocolate cake I immediately thought to turn to nuts and honey as my inspiration.

Because what’s better than chocolate, hazelnuts, and honey? Well… maybe peanut butter but peanut butter is everywhere!

I have never roasted nuts on my own before from scratch (besides one time when I purchased an almond roasting kit from Target a few years back on clearance for Christmas gifts… but that doesn’t count because it was a kit!). I’ve heard it’s easy and figured I’d give it a go. Luckily it was easy! If you remember to watch the nuts closely so they don’t burn.

Orange You Glad The Kids Are Asleep

“Orange you glad?” Do you remember that saying from childhood? Maybe from a knock knock joke? I sure do. And I fondly remember it every time I sit down with this drink. Most of the time I’m thinking, “Orange you glad the kids are asleep?”

Now don’t get me wrong… I love my kids. But some days the countdown to bedtime is on as soon as my husband walks in the door. Other days the countdown to bedtime is on as soon as they wake up from their naps. But no matter what type of day it is, this drink can perk me up.

Because having that time to enjoy a drink after the kids bedtime means that I get to take a moment for myself before delving into the wonderful world of working into the night. And it brings me right out of a bad day with just a sip. We all need drinks like this in our lives.

(oh yes, working from home means I get to enjoy a drink on the job… just not excessively!)
