Peach Upside Down Cake

I recently held a playdate over at my house for my playgroup and one of the mamas came over with a large carton of peaches in tow to share with everyone. When she left she graciously left the remaining peaches.

Now there are a lot of foods I’ll eat without a problem but I’ve never taken well to peaches, nectarines and apricots. Something about them has never been very appealing. So I was very surprised when my son started asking to eat the peaches and could consume a whole, large one on his own for breakfast. But even though he showed an interest in them he couldn’t eat the peaches fast enough to go through the whole bunch.

I had to start thinking of a way to use up the excess peaches. And so I went off to Google in search of a good recipe to use for our upcoming 4th of July dinner at my brother-in-law’s house. As soon as I landed on this recipe by one of my favorite cooks, Alton Brown, I knew he wouldn’t disappoint me. But since I was feeding a larger group and also didn’t have the time to prep and bake this dessert at my brother-in-law’s house I tweaked the recipe a bit to allow for making larger cakes.

I tested the recipe out this weekend and whoa! It came out perfectly! The addition of vanilla bean ice cream took this dessert over the edge. Remember how I’m the one who isn’t so crazy about peaches? Well I even ate a piece for breakfast the next day! I’ll definitely be trying this with apples in the Fall.

Double Chocolate Zucchini Bread Recipe

I love summertime. For one we get to play outside later in the evening and secondly my mother-in-law is always sure to bring over some yummy (but very large) zucchini.

Figuring out ways to use up the zucchini is always fun and shredding it to put in baked goods and savory meals is usually the way to go. Especially since my son has a fascination with our food processor.

When searching for a recipe to use up some of our zucchini I stumbled upon a delicious looking muffin recipe. Chocolate and zucchini? Why it’s a match made in heaven!

This bread tastes exactly like a chocolate cake. My son would have had no clue that there was zucchini in it had he not been the one to help mix the ingredients together.

And the mini chocolate chips just add a bit of deliciousness and push this bread over the edge. Next time I might consider adding a few walnuts to the mix. Mmmm….

I absolutely adore strawberry season. Being able to go to the farmer’s market each week and pick up a huge amount of fresh, ripe strawberries just puts a smile on my face.

But there are only so many yummy bowls of strawberries and yogurt one can eat without wanting to do more. So when I brought back my latest batch along with some fresh, homemade greek yogurt I had the genius idea of putting the two together and baking!

Good thing too because I tested the recipe out on my girlfriends for our monthly book club. They’re such troopers. They’ll try anything I make and honestly give feedback. Luckily these muffins passed the test.

So whenever I can, I try and take control. I am the one hosting the party and I have control of the menu. So when we celebrated my dad’s birthday last week I made sure that everyone came over to my house and I served all of the foods I felt good about eating.

This past week has been HOT! Like in the 90s one day hot and 80s the rest. So we needed a snack that would cool us down and satisfy our sweet tooth without being too bad.

Well, we found an amazingly cool and refreshing treat that’s low-fat and quite good. Fruti frozen fruit bars have become my new obsession and boy are they tasty! Plus they’re low in calories and the strawberry bars have zero fat. Talk about a great find!

They’re conveniently located at Sam’s Club so  I can pick up a box to keep in our freezer so we can enjoy them any time we need a delicious frozen fruit pop. And they come in a convenient 4 pack inside the large box that I can break out to make more room in my freezer. Or so I can keep one box in my inside freezer and the others in the freezer in the garage. Easy access!

Budget Friendly Oven Roasted Whole Chicken Recipe

While on Nutrisystem I’ve started to adapt easily to this lifestyle change. And that doesn’t mean I’m the only one eating healthy! I’ve also continued to prepare delicious, healthy meals for my family as well.

One of my favorite budget friendly recipes has to be this oven roasted whole chicken. Not only is it an amazingly delicious meal (and comes with the sides all on one roasting tray) it also provides a good amount of left overs to use in other meals throughout the week.

Plus I can use some of the breast meat as my Power Fuel option for lunch on top of a delicious spinach salad with veggies. Score!

While roasting a whole chicken may seem like a daunting task, once you tackle it the first time, the next few times after that are even easier. You could even throw the whole thing in a crock pot like I sometimes do. But the taste of the roasted version is always something I turn back to!

Light Deviled Eggs {Nutrisystem Recipe}

With an overabundance of hard-boiled eggs in our home left over from Easter I’ve tried to come up with some creative ways of incorporating these little eggies into my new lifestyle.

While I could technically eat a whole egg while on the Nutrisystem program, I’d much rather get the most bang out of my buck. And these light deviled eggs hit the spot perfectly and only count as a limited extra on Nutrisystem.

Or you could choose to eat more (not all) as a power fuel! How filling is that? No guilt, great taste, and easy to prepare. Now that’s my kind of snack!

The hearty rich taste that keeps me full until lunchtime paired with the never-ending possibilities of flavors and creations you can make with it. Plus, it takes about 5 minutes to make on the stove top. And homemade tastes way better than the packets.

This cinnamon raisin oatmeal is my answer to a craving for a cinnamon raisin bagel. And I just didn’t have enough time to make those! The perfect amount of sweetness and the deliciously tasty raisins that plump as they cook in the oatmeal. This is definitely the perfect spoonful for breakfast.

Chocolate Ricotta Stuffed Strawberries

Love is in the air and Valentine’s Day is just a few days away. For those of you who, like me, are watching their girlish figures this dessert recipe is for you! These chocolate ricotta stuffed strawberries are not only delicious, they’re filling too! They’ll satisfy even the biggest sweet tooth.

The strawberries at my local Costco looked absolutely amazing this week. So I knew I was either going to dip a few in chocolate or come up with something creative. This was the creative option. And it took all of 10 minutes to prep and make.

Make a few for you and your significant other or a whole platter for a party! Everyone will be glad you did.
