Friendships are very important to me. Making time for my girlfriends is something I need to do to keep my sanity and with three kids that can get difficult. Especially when one of them is 5 months old and isn’t too good at taking a bottle. So in order to get my girl time in I often have friends come over for girls night in instead of girls night out. Sure, girls night out is fun, but girls night in is just as fun and can save me a little money too.

This time I paired my love of cheese platters with an on-the-go solution to enjoying them easily whether we’re at my house, or having a girls night in at one of the other ladies houses. All I have to do is pack them up and grab a box of wine and we have a portable girls night. Easy peasy.

I grabbed a few things we had in the fridge and pantry and paired them with some cheeses and meats I’d normally serve on a cheese platter. The classic combo of flavors found in a caprese salad, some melon and prosciutto with provalone, and my favorite pizza toppings. Each trio pairs perfectly with either a glass of cabernet sauvignon or chardonnay.

So I’ve started to schedule snack and meal times too.

Easy Snack Ideas

I love snacks. Especially ones I don’t have to prep. With limited time, as I mentioned, I need easy. When I was at Costco I saw these awesome Ready Snax filled with some of mine and my kids favorite snacks already packaged together. Carrots, grapes, cheese, and pretzels. All awesome snacks I normally spend time preparing in baggies individually only to have 1/2 wasted or forgotten somewhere. And, lets face it, I’m eating their snacks too so I want something I enjoy.

Now I can grab a few Ready Snax and everyone’s happy. At least until lunchtime. 

The kids both love the green juice I prep ahead since I mask the kale and spinach taste with apples and cucumber. Even I wouldn’t like just kale or spinach juice. The fresh juice is much better than the sodas and processed juices I could buy for them elsewhere. I simply juice everything in the juicer on Sunday and put in a large pitcher in the fridge to use throughout the week. It lasts 2-3 days and is a great way to get veggies into me and my kids in addition to our snacks. Plus, they know what they are drinking. I don’t really hide anything.

Green Juice Recipes

Basic Green Juice

  • 2 handfuls spinach, rinsed and dried
  • 2 handfuls kale, rinsed and dried
  • 3 celery ribs
  • 2 cucumbers
  • 2 green apples
  • 1 lemon, peeled

Add all ingredients to your juicer alternating the greens with the fruit and cucumber.  Enjoy as is or chill in the fridge! If storing, make sure to shake well before drinking.

Alternatives

In addition to green apples and/or cucumbers you can add pineapple, mint, pears, ginger root, other types of apples, etc. The awesome thing about green juices is the variety in what you can create! There are many benefits to juicing.

This past Tuesday was my 8 year wedding anniversary. So much has happened in the past 8 years and I couldn’t be more in love with my husband or more excited about the years to come. Our family has expanded, we’ve moved to a great home in the perfect area of town, we’ve become involved in our community and have expanded our friendships. Life is good.

In celebration of our anniversary I wanted to make something for my husband. I remember him seeing a succulent terrarium at a restaurant or a business somewhere and mentioning that he’d like one for his desk. I had filed it away in my head as a project to make for his birthday or another special occasion. So when this anniversary snuck up on me, I thought that a homemade gift would be perfect.

After visiting City Farmers Nursery with the kids one day to pick up some chicken feed, I saw that they sold all of the components to make your own succulent terrarium. And the options were perfect for creating my own vision and design. Plus? This gift cost less than $20 AND took less than 15 minutes to put together. I’d call that an awesome win! And my husband? He LOVED it. It’s already on his desk at work.

There’s been big controversy about vaccines lately and moms over the years have had to make the decision to vaccinate their kids or to not vaccinate. With all of the hubub going both ways I’ve heard some ugly things being spewed from the mouths of friends and acquaintances that I thought I’d never hear.

And now with the recent bill being signed into law in California, things are heating up again. And moms aren’t going to have a choice anymore. Under the law, vaccinations would be required of children first entering public school, or when they enter seventh grade, after July 1, 2016.

Judgement has been cast and in my group of friends we don’t even bring up the V word for fear of becoming a pariah. But that shouldn’t be the case. Parents should feel comfortable having an open dialogue with their friends about the safety and benefits – or risks – of vaccines. Especially vaccines for life threatening illnesses that are live in the world today.

Our family has chosen to go by a delayed vaccine schedule. We discuss vaccines at every well baby visit and make an informed decision when it comes to what vaccines are given and what vaccines are delayed until the next visit. And we don’t mind coming in in-between appointments for a shot only visit.

This means that our kids get every vaccine on the list, but when they are given is more spread out. I personally couldn’t handle giving 4 shots at one visit to my little ones so we have a 2 vaccine max at every visit. Then we come in-between appointments to get the other shots we need. Priority is given to the vaccines our doctor thinks is the most beneficial at that time. When we sit down with our doctor we discuss what illnesses are out in the population at the time and what will keep our children healthy. 

Diseases and viruses like measles and polio can prove to be devastating to those who aren’t immunized so there’s a benefit to keeping those immunizations up to date. But some parents don’t have the luxury that I do to decide on what vaccines to give and what to hold off on. Some children who don’t receive the proper immunization risk the chance of contracting these life threatening illnesses.

I vaccinate my kids and see the benefits and reasoning behind making sure our kids are vaccinated, however I am also sad about this bill for many reasons. One being the open endedness. Who determines what ‘any other disease deemed appropriate by the state Department of Public Health*’ is? Will we vote on those or will the governing bodies determine those? Can we get titers for the kids before requiring a booster for a vaccine to determine if a booster is needed?

The fact that this list is also requiring a vaccine for an STD be given to our children bewilders me. Will they eventually require the HPV vaccine too? I sure hope not! Also, while I agree with the need for vaccines I can’t believe that this was created purely for the health and wellness of the masses. Is the government reaching a bit too far?

Chicken Parmesan Burgers

Do you ever get a craving for something but don’t have the time to make it properly? Or have someone in the house who isn’t as crazy about it as you? One of my favorite dishes is chicken parmesan. It’s delicious comfort food that hits the spot. And paired with homemade noodles, it’s the perfect dinner any time.

But I have one problem. My husband doesn’t care for pasta that much.

I know! He’s crazy, right?

Normally I’d just make it and let him “suffer” through a homemade meal but since it’s our anniversary today (8 years!) I figured I’d be nice and recreate one of my favorite dishes into one of his. Burgers. Win-win!

Ditching the pasta was fairly easy. These chicken parmesan burgers not only taste like delicious chicken parm, they’re stuffed with mozzarella cheese for an added element of flavor.

Using the traditional flavors of chicken parm and mixing them with a few surprises (have you ever added pasta sauce, a convinient pantry staple, to your burgers?) turned into a juicy, delicious burger that made both my husband and myself happy come dinnertime.

Topped with more mozzarella and a pasta sauce with the highest quality ingredients, these burgers are taken to a different level.

Quick Tip: Using your thumb, create a well in the center of your burgers so they don’t shrink while cooking.

Stuffed Chicken Parmesan Burgers

Stuffed Chicken Parmesan Burgers

  • 1 pound ground chicken
  • 1/4 cup parmesan
  • 1/2 cup Francesco Rinaldi pasta sauce,
  • 2 tablespoons Italian seasoned bread crumbs
  • 2 dashes Worcestershire sauce
  • salt and pepper
  • 1 cup mozzarella, shredded
  • olive oil
  • buns

Preheat oven to 350 degrees. Mix together ground chicken, parmesan, 1/4 cup sauce, bread crumbs, Worcestershire sauce, salt and pepper. Once all ingredients are incorporated, form 6 patties from mixture.

Get a large pan on the stove and preheat with a little splash of olive oil.

On 3 patties, divide 1/2 cup of shredded mozzarella amongst them. Take the untopped patty and place it over the mozzarella topped patty. Pinch the ends together.

Using your thumb, make a well into each patty to prevent patties from shrinking while cooking.

Grab the patties and put them in the pan. Cook on either side until golden brown, about 3 minutes. Then place in an oven safe dish and cook in oven until done, about 15-20 minutes.

Add patties to buns and top with mozzarella, let melt, then top with pasta sauce. Enjoy with a delicious salad!

The flavors of summer are always welcomed in our home. Our lemon tree is surprising us with a few lemons and we’re in peak blueberry season. Or so it seems that way in the grocery store. The blueberries have been on sale and my kids can’t get enough.

With such an overabundence of blueberries and some juicy lemons ripe for the picking on our tree, these lemon blueberry tarts were the perfect dessert to make for a summer party we were invited to.

These super easy tarts are always welcome at parties and special occasions! Make the tart dough the day before and fill the morning of your party for a quick, make ahead treat that everyone will love.

Lemon Blueberry Tarts

  • Basic Tart Dough (baked and cooled)

Lemon Blueberry Filling:

  • 8 ounces heavy whipping cream
  • 2-3 tablespoons powdered sugar
  • 2 tablespoons lemon curd
  • fresh blueberries (washed and drained)
  • mint leaves ((optional garnish))
  1. In a large mixing bowl, add whipping cream and powdered sugar. Whisk until stiff peaks form, scraping bowl a few times. Stir in lemon curd.
  2. Spoon into prepared tart shells and top with fresh blueberries. Garnish with mint leaf if desired.

Hint: Look for lemon curd in the jam/jelly aisle at the store.

This summer I’m sharing a few delicious tart recipes. But first I wanted to share my tart dough recipe used for each tart. I love how versatile and easy these tarts are. They’re the perfect summer entertaining dessert as a simple bite-sized treat.

Having the tools on hand to make tart making easier is a must! Make sure to pick up a tart shaper and a mini muffin pan to make the perfect mini tarts.

The best part about them is that they’re so versatile! I’ll be sharing lemon blueberry tarts, strawberry cream cheese tarts, and raspberry tarts.

Basic Tart Dough

This dough is a basic tart dough recipe. Please note that you will need to chill at least 1 hour or overnight.

  • 1/2 cup softened butter
  • 3 ounces cream cheese (softened)
  • 1 cup flour
  • 2 tablespoons sugar
  1. Using a mixer, beat butter and cream cheese together until smooth. Add flour and sugar and mix until a soft dough forms. Cover and chill at least 1 hour or overnight. (I’ve chilled for up to three days without any issues).
  2. Shape dough into 1″ balls and press into an ungreased mini muffin pan. Using a tart shaper dipped in flour, press dough to form the tart shell.
  3. Poke bottom of shells with a fork and bake at 450 for 10-12 minutes or until golden brown. Remove from oven and allow to cool completely before filling.

Chili Cheese Crescent Dogs on the Grill

Looking for a fun and easy dinner this summer? Try these Chili Cheese Crescent Dogs on the grill. Not only are they delicious, they’re easy too!

Do you ever have one of those days in the summer where you just don’t want to turn on the oven? Living in SoCal, we have about a month of that. So on those sweltering hot days I turn to the outdoors and our barbecue to get creative with dinner. But I don’t leave all of my kitchen tools in the kitchen! I also bring them to the grill.

This past weekend I busted out the pizza stone and made some delicious chili cheese crescent dogs on the grill. Not only were they quick to put together (I used leftover chili I froze earlier in the month), they took less than 15 minutes to cook on the grill. And? I wasn’t sweating while eating my meal. Now that’s a win!

Stuffed crescent dogs are so easy to make. And even when I’m watching what I eat, I can easily modify them by using fat free beef franks and fat free crescent rolls.

Just make sure you leave a little edge to use while wrapping them up together. And pinch the seams of the crescent dough together really well (or use a rolling pin to roll the dough out flat) so that none of the stuffing comes out.

Chili Cheese Crescent Dogs

  • 4 Beef Franks ((or Reduced Fat Beef Franks))
  • 1 tube of Crescent Rolls
  • Chili
  • Cheddar Cheese
  1. Start up the grill. If using charcoal, make sure to wait until the charcoal is all white/gray. Place a pizza stone on the grill to heat up.
  2. While grill is heating up, roll out crescent dough and break off into four rectangles (each rectangle will be made out of 2 triangles). Press seam together by using your fingers or a rolling pin.
  3. Place a hot dog on each of the rectangles. Top with choice of toppings (about 1 tablespoon of chili and 1 tablespoon of cheese) and seal together by wrapping dough around the hot dog and toppings. Make sure the seams are pinched together.
  4. When grill is at the right temperature (375 if a gas grill, white hot coals if a charcol grill) place stuffed crescent rolls onto the pizza stone. Bake on the grill for 13-15 minutes or until golden brown and the dough is completely cooked.
  5. Remove from the stone and serve. Enjoy!

5 Ways To Help Children Get Their Bedroom Organized

Is your child’s bedroom an unorganized mess every time you walk in? Well, if your children are old enough, it may be time to help them learn how to organize their bedroom.

Last year I shared how we get the kids involved in cleaning. And organizing isn’t that much different. Once your kids have mastered cleaning their rooms, learning how to organize will make keeping their rooms clean much easier.

Check out these five ways in which you can help your children get their bedroom structured and under control.

5 Ways To Help Children Get Their Bedroom Organized

#1. Bins & Baskets

In my opinion, you can never have too many bins or baskets in a room. As long as there is a place to store these bins and baskets, you are good to go. These contraptions can be stored under beds, in closets, and even on dressers. You can label each bin and basket, so your child knows exactly where everything goes.

#2. Get Rid of Excess

I believe that children learn how to part with things, if their parents teach them well. You can help your child get their bedroom a little more organized by helping them to learn to part with toys that they’re no longer using. Teach your children to always be in the process of getting rid of items that are no longer needed.

#3. Hands & Knees

You may never truly see what your child sees unless you are on your hands and knees. Don’t be afraid to get a child’s eye view of their bedroom this way. You may understand why their room is dirty or unorganized, if you see it from their point of view. Plus, this will help you come up with ideas to help them get a little more organized. Maybe their shelves are too high for them to reach or their drawers are hard to open. If we expect our kids to be a little more organized, then we have to make it a little easier for them.

#4. Always Involve the Child

Making your child leave, while you clean their room teaches them nothing. You must always involve your child in the organizational process, if you want them to learn how to get their bedroom organized. Although this process might take a lot longer, you’re teaching your child a lot during the organizational process. Plus, they are going to appreciate your hard work a lot more if they see what you’ve put into it.

#5. Organize from Top to Bottom

What does this mean? Well, to keep things organized in your child’s bedroom the organizational layout needs to make a little more sense. All toys and things they need to reach should be on the bottom and other items (they don’t need) should be higher up. For example—if you still pick out your child’s clothing, then hanging them up on the highest rack is okay. You can also place items that are not as frequently used on the top shelves, to help eliminate clutter and the temptation to drag out unneeded items.

Organizing your child’s bedroom doesn’t need to be a complete nightmare. Just remember to keep up with the clutter and to always keep things simple. The more items you have in your child’s room, then the harder it will be to organize it.
