Every year for Halloween I host a party for my playgroup. Something fun, easy, and entertaining for the kids. We enjoy painting pumpkins, creating snack bags, and having a great time while all in costume.

But one of our favorite parts about this get together is the fact that we all come together and bring delicious goodies for everyone to sample. This year I decided to try out some festive rice crispy treats after my husband made a batch and left about 1/2 the pan in the fridge.

I don’t know what it is about slow cooker pulled pork but it’s one of my absolute favorites to make! From root beer pulled pork, to coke pulled pork, to regular old spiced up pulled pork like this one, a pulled pork sandwich is definitely comfort food in my home.

And if you don’t have time to make homemade buns, simply grab some slider buns from the grocery store and enjoy some mini pulled pork sliders like these. Don’t forget the dill pickles on top though. They definitely add something to this delicious meal.

Chocolate Chip Pretzel Cookies with Chestnut Spread

A few weeks back I received a fun delivery at my doorstep. Pretzel Crisps were delivered in just about every flavor and I couldn’t wait to dig in. And boy did we dig in! SO much so that I needed to run out and grab more Pretzel Crisps, stat. Luckily our Costco sells the huge bag of them so we were saved.

But then I realized I was stuck with a HUGE bag of pretzels and no parties coming up. So I decided to bake with them. I was already trying to figure out what to do with the chestnut spread I had in my Try The World box so I figured why not add pretzels AND chestnut spread into a cookie.

Of course chocolate was added to round everything out. But I didn’t just go with your standard semi-sweet chocolate chips. I added some chunks of TCHO dark chocolate. Boy was this flavor combo deliciously good! At first I thought it was a tad too salty but my friends confirmed that they were perfect.

Now if they are more salty than sweet for your taste I have the perfect solution! Grab a scoop of vanilla ice cream and nestle it in between two cookies. Ice cream sandwiches! Yum. [Read more…]

Healthy Pumpkin Muffins

So maybe it’s become an obsession. But I’m pretty darn in love with pumpkin about now. The one thing that makes the cool crisp weather better are these healthy pumpkin muffins with a cup of hot coffee.

Simple to make, tasty, and a favorite amongst my playgroup, these muffins really hit the spot.

I drizzled a simple mix of powdered sugar, milk, and pumpkin pie spice over the top for a little extra sweetness. It definitely made the muffins tastier. [Read more…]

We’ve had a surplus of eggplant in the garden so I’ve been going crazy trying to figure out how to use it all up. But I’m lucky. My friends are superstars and have the best eggplant recipes to try.

From eggplant philly sandwiches, to ratatouille, to eggplant parmesan these dishes are not only delicious, they have helped me go through my eggplant. The problem is I have three more almost ready to harvest.

Green Chili Cream Cheese Chicken with Pompeian Olive Oil

Green Chili Cream Cheese Chicken

Last week I received a box of goodies from Pompeian including a nice bottle of their Extra Virgin Olive Oil. Inspired by the robust, delicious flavors of this olive oil and the fact that our garden has been overflowing with green chilis lately, I got a little creative in the kitchen last night. Since I was craving jalapeno poppers I figured I’d marry the flavors in with the chicken I already had in the fridge. And that’s where this green chili cream cheese chicken came to life.

I hate to pat myself on the back or toot my own horn but this is seriously one of the best dishes I’ve made in a long time. And I owe it all to my friend cream cheese. Well, it could also be attributed to the delicious Pompeian Extra Virgin Olive Oil I used to saute the veggies and chicken in.

The one thing  I think everyone will agree on is the fact that this 30 minute wonder (what?? It’s quick to make too?) is hands down a winner! [Read more…]

Pumpkin Banana Muffins Fit for a Monkey

In celebration of the premier of Julius Jr on Nick Jr (you can see my post over at Someday I’ll Learn if you didn’t hear about the show) the kids and I got in the kitchen and started baking up some muffins with the bananas that were browning on the counter. And since there was an open can of pumpkin puree in the fridge we decided to give it a go and make these pumpkin banana muffins.

Everyone knows that when you’re watching the premier of a children’s show starring a monkey, you have to eat banana-themed food!

These muffins were absolutely delicious! Moist, fluffy, and very kid friendly. I think both of my kids ate at least two each! We might even be adding some mini chocolate chips next time I make them for an added kick. [Read more…]
