Every Father’s Day I sit and wrack my brain with what I think would be the perfect gift to give my husband. Would he love his favorite TV series on DVD? Does he want to go somewhere and make a day out of it? Or does he love the cute, homemade gifts I have the kids make him every year?

So I decided I’d come up with a plan this year. Each child gets to pick out something to give him from either the store or online (I can still direct them to things he’s interested in or has asked for) and then we’ll make something for him.

Double Chocolate Zucchini Bread Recipe

I love summertime. For one we get to play outside later in the evening and secondly my mother-in-law is always sure to bring over some yummy (but very large) zucchini.

Figuring out ways to use up the zucchini is always fun and shredding it to put in baked goods and savory meals is usually the way to go. Especially since my son has a fascination with our food processor.

When searching for a recipe to use up some of our zucchini I stumbled upon a delicious looking muffin recipe. Chocolate and zucchini? Why it’s a match made in heaven!

This bread tastes exactly like a chocolate cake. My son would have had no clue that there was zucchini in it had he not been the one to help mix the ingredients together.

And the mini chocolate chips just add a bit of deliciousness and push this bread over the edge. Next time I might consider adding a few walnuts to the mix. Mmmm….

As anyone who knows me can tell you, I love my coffee. I have two cups a day every morning and love everything about it. From taste, to making meals even tastier, to perking me up and getting me going, coffee truly is a super food to me. And, in my opinion, Gevalia coffee is a top of the line, super premium super food.

When I first started drinking coffee I really didn’t know what I was doing. I’d just grab the cheapest grounds from the store and would go on my way. I absolutely adore strawberry season. Being able to go to the farmer’s market each week and pick up a huge amount of fresh, ripe strawberries just puts a smile on my face.

But there are only so many yummy bowls of strawberries and yogurt one can eat without wanting to do more. So when I brought back my latest batch along with some fresh, homemade greek yogurt I had the genius idea of putting the two together and baking!

Planning for the Future: Retirement Planning

While I am far from retirement I have started planning for it from an early age. The one thing my dad always talked about as soon as I was old enough to get a job was to start saving early so I would have enough put away when I was ready to retire. Yes, at age 16 I was already well aware of retirement planning.

And I did what I’m sure other teens did not do. I listened to my dad. And at the age of 17, when I was eligible per my company’s regulations, I opened up a 401K. At first I simply put in a certain percentage, not quite sure what matching was and how it would benefit me.

Then my dad taught me the benefit of being aware of how company matching could do for my savings and I increased the percentage I was putting away each week. Lucky for me my husband also felt the same way about early retirement planning and had already started his 401K as well.

But I’m sure many aren’t lucky enough to have a dad like mine who pushed me to save at such an early age. So I’ve come across some great tips while researching ways to continue my retirement planning now that I’m a work-at-home mom.

Retirement Planning at an Early Age

1. Set up an automatic retirement savings plan –

Whether you contribute to a 401K through your work or set up a savings account on your own, start putting away a percentage of each paycheck starting now. The sooner you start saving – and investing – the sooner you’ll be able to retire.

2. Take advantage of employer contributions –

As I mentioned before, the company I worked with would match our 401K contributions up to a certain percentage. If your company offers this then you should definitely be taking advantage of this. Who can say no to free money? Usually there is a cap on what they’ll match to so make sure you know all of your company’s guidelines and regulations.

3. Leave your money where it is –

While it may be tempting to cash out on your 401K for that new car or a down payment on a house, you aren’t doing yourself any favors! Consider sitting down with a financial planner to plan out how to save for large purchases or investments without touching your savings. You’ll be thankful in the long run.

4. Sit down with a professional –

Still lost with all of this talk of savings? Consider sitting down with a professional and going over your finances. From there you can determine just how much you can be putting aside for retirement and how long you’ll continue to do so. There are so many great resources and apps out there for us to use. Take advantage of the knowledge at your fingertips!

Encourage Reading with Kids Reading Nook Ideas

The one thing I will never deny my child is a book. No matter where we are, if my kid finds a book they love, I’m going to get it for them (within reason). I can say no to more toys, more clothes, more shoes, but I can’t say no to books! So I decided to find out how to encourage reading even more and was amazed at the great kids reading nook ideas I came across.

Not only would the kids be able to have a place to access their books, they could cozy up and read them as long as they want.

I read somewhere that the biggest hurdle at home to get kids to read was the lack of books available to them. They either didn’t have many books to access or there wasn’t a place to put them. So from a very young age I’ve made sure that my kids have access to many different books. And we may have taken it a bit overboard.

We have books pouring out of every room in the house. So having one central location for most of the kids books was a big priority when we rearranged the room and moved some furniture. And with this change we created our kids reading nook.

Keep Moving in Style with the New Fitbit Flex

It’s no surprise that over the past few months I’ve kicked up the motivation and have started moving more regularly. Since first being introduced to Fitbit and receiving my Ultra I’ve increased the steps I take daily from an average of 5,000 to 10,000.

As a Fitbit ambassador I’ve enjoyed testing out and reviewing the products Fitbit continually creates and I love how much better each product gets!

Since first receiving my Ultra I’ve had the chance to try out the Fitbit Zip and Fitbit Aria scale. And now my Fitbit family includes the new Fitbit Flex. As soon as I saw that my Flex arrived for review I started jumping for joy and quickly figured out how to charge and use it ASAP.

Oh my wow! I am in LOVE with the Fitbit Flex. Not only do I consider it a fashionable accessory, I love how it keeps me on track and determined to constantly push myself through the day.

Root Beer Pulled Pork Slow Cooker Recipe

My absolute favorite way to make pulled pork is in the crock pot. With a can of rootbeer.

Yup! You heard that right. I absolutely love that I can realize that I forgot to pull meat out of the freezer the night before, grab a pork loin, put it in the crock pot with a can of root beer and just let it simmer all day for a delicious and tasty meal in the evening.

What makes them even better? Some amazingly fresh and yeasty homemade hamburger buns!

If you haven’t already tried this way of cooking your pulled pork then you need to! It’s the perfect dish for the coming summer months.
