Low Carb Fish Tacos + a Homemade Tartar Sauce Recipe

Lettuce Wrapped Mahi Mahi Tacos with Low Carb Tartar Sauce

It is summer and I just do not feel like cooking big, heavy meals. So when I grabbed a box of salmon fillets from Costco a few weeks ago, I was dying to try them out. The fillets go in the oven (boo) but cook really quickly and what you can do with them afterwards is even better!

We had been just serving the fillets with some veggies or over a salad but I decided to get a little creative and create some mock fish tacos that fit my low carb lifestyle. I’ve been low carb since the beginning of June (actually started last year but that lost steam around the holidays). With my new lifestyle, I also started a blog because… why not? It’s a local blog that covers local restaurants and how to eat low carb around San Diego but it’s also going to be chocked full of the LCHF recipes I try out. Like this lettuce wrapped mahi mahi taco with low carb tartar sauce.

I’ll make sure to share a snippet and photos of my recipes here with a link over to the full recipe on each post so you can stay in the loop! And if you’re living a low carb lifestyle already, I’d love to hear your go-to food ideas!

Tic Tac Toe Valentines Day Printables

When it came to Truth or Dare when I was in school, I’d always lean towards a truth. But this month I’m sharing a few dares with you. And super cute tic tac toe valentines you can use in a few weeks! Added bonus? They’re non-edible so they work for preschoolers and school agers.

No Cook Chocolate Avocado Pudding: A Healthier Alternative

This is a sponsored post written by me on behalf of The a2 Milk Company™. All opinions are 100% mine.

No Cook Chocolate Avocado Pudding - a healthier alternative to the traditional recipe

Dessert is one of my family’s favorite parts of our meal. And most of the time when we all get together for a family meal, dessert is served. However I’ve noticed a few relatives who’ve declined dessert over the past few get togethers. After chatting with one of them about the reason, I found out that they’ve realized that they have an issue with lactose and since most of the desserts served have some sort of milk product, it’s easier to say no than deal with the consequences later. While they haven’t been formally diagnosed with lactose intolerance, by avoiding dairy they’ve reduced their tummy troubles.

Because I hate seeing people feeling left out I figured I’d play around with one of my favorite pudding recipes and replace the dairy with a2 Milk®. Then I went a step further and figured out a way to make it thick and creamy without cooking it! Since I already use bananas and avocados in my smoothies to make them creamy and thick, I thought they’d be amazing together in this pudding recipe as well. And the best part? I mix everything together in the blender! Takes less than 5 minutes for everything to come together.

No Cook Chocolate Avocado Pudding in blender

Haven’t heard of a2 Milk® before? It’s pretty awesome. Originally, all milk contained only the A2 protein. Over time a genetic mutation occurred in cows and a new type of protein developed called A1. This A1 protein causes digestive discomfort and is in all cows’ milk in-stores today, even organic milk.  a2 Milk® is the only fluid milk on the US market that is guaranteed A1 protein free.

How do they do it?

The a2 Milk Company™ has partnered with U.S. family dairy farmers in upstate New York and the Midwest to expand the a2™ herd. Their cows naturally produce milk with only the A2 protein. And their farmers are certified in the humane treatment of animals, their cows are fed a vegetarian diet and never given hormones or rBST, and the milk is antibiotic free and contains no artificial ingredients or additives. Pretty cool huh? And it tastes no different than regular milk! My kids love it and haven’t caught on that it’s any different.

No Cook Chocolate Avocado Pudding

  • 1 avocado
  • 1 banana
  • 1/2 cup cocoa powder
  • 1/2 cup honey* (or other sweetener)
  • 1/2 cup a2 Milk®

Add all ingredients in a blender or food processor. Process until completely blended. Serve right away with some berries or chill in the fridge if you prefer cold pudding.

* If you’re making this for children under 1, use an alternative to honey like agave or maple syrup.

The results are an amazingly creamy and chocolaty pudding that the kids (and adults) all gobble down! I call that a success.

5 Easy Way to Be Healthier in the New Year

5 Easy Ways to Be Healthier In The New Year

Waking up on New Year’s Day is a great feeling! It’s a new year, a blank slate, a fresh start to make changes and set goals. Setting a new goal, or resolution, for the year that’s ahead of you gives you renewed strength and purpose to conquer your dreams. Having said that, did you know only 8% of people actually stick to their goals throughout the whole year? Sometimes, you want to eat healthier but you also want to enjoy pie while out to dinner with your friends. I’m here to tell you that it’s okay! Every now and then you are allowed to enjoy some desserts.

Going into 2016 you want to start leading a healthier lifestyle! This means so much more than just eating healthy or losing weight. In order to achieve your goals to be healthy in 2016, you have to have a healthy mindset and the right setup to make it work. Below we list the easiest 5 things you can do in order to be healthier in 2016. This doesn’t necessarily mean losing weight (although it could be that) but being healthy is more than just a number on a scale. Having a healthy mental state, a good routine, and the right tools is the best way to set yourself up for better health. This may not be easy but it’s worth a shot! If you fail, pick up the pieces and try again. Even if it takes you all year to figure out how to lead a healthier lifestyle. And always remember: Everyone’s path looks different!

So here are some simple ways to improve your health and wellness in 2016

5 Easy Way to Be Healthier in the New Year

1. Routine

Start your day off right! Every morning wake up and do a simple routine. Mine usually consists of washing my face, then I drink a glass of water infused with lemon oil or a squeeze of fresh lemon for immune and digestive support. Finally, I sit with my cup of bulletproof coffee and set a positive intention for the day. For me, this means meditating in my faith and going over my daily affirmation (I share these daily on Facebook). This was super easy when I didn’t have kids but now in order to do this, I must wake up a bit before them to get enough time to start my day off right. And you know what? Some days it just doesn’t happen with kids but I try to make certain it does 80% of the time. However, if your kids are overrunning you for a week straight, give yourself some grace! Being a mom is not an easy job.

2. Cut out chemicals

Try and research affordable alternatives to cleaning and household items you use in your home. Cutting out chemicals improves your health drastically and increases your longevity. Before we started using Thieves household cleaners we used homemade cleaners with vinegar, distilled water, baking soda, and tea tree oil. It was 1/100th the cost of buying cleaners at Target. But that doesn’t mean you have to make your own cleaners or purchase from an essential oil distributor. There’s also no problem with purchasing the ready made cleaners already on store shelves.

3. Cut out processed foods

For many this is difficult to do because many foods have become more like addictions. That may seem extreme but it’s very true. You may even consider changing your lifestyle like I did to reset your system to not crave refined sugars every day. It’s a hard transition, and some even come down with what’s called keto flu, but you feel amazing after! So amazing that you never want to go back to how you ate before. Cutting out refined foods, carbs, and sugars, is very simple and the easiest way to boost your metabolism and set yourself up for a healthy life.

Try not eating foods that come in a bag, can, or box. Anything with a long list of ingredients you cannot pronounce is good to avoid. Instead of cereal for breakfast, try eggs, sausage, and some spinach. If that is too much to make on the go try some bulletproof coffee. You’d be amazed at how full you are from one cup of coffee For lunches try a nice big salad with meat and a handful of nuts or a lettuce wrapped burger! For dinner stick to protein and veggies. For the kids you can serve a healthy carb like sweet potatoes, brown rice, or quinoa. It takes a little planning but in the end it will become your way of living.

I’ve even started ordering my food from Amazon Prime Now (yay Sprouts delivery!) and have a monthly fruit and vegggie delivery through Farm Fresh to You. Thinking of signing up? Use my referral code: DANI3568. And use promo code HEALTHY for $15 off! Not only does it help me stay on budget, but we’re forced to plan and eat everything that comes to the door. This means less wasted food and less wasted money.

4. Cut out sugary beverages

Soda, juice, lattes, milk, tea, Gatorade, diet sodas you name it. We stick to coffee, water, bubble water (La Croix), and sometimes 100% juice (for the kids). You’ll be amazed at how much this improves your energy throughout the day and helps you shed pounds fast! (side note: tea bags are okay here I’m talking about teas that come in a bottle from the store that have 45 grams of sugar in them). The biggest thing to do is look at labels. See what you’re consuming and how much sugar or carbs are in the drinks you’re enjoying. That doesn’t mean giving up lattes completely. Consider subbing almond milk or heavy whipping cream instead and asking for sugar free syrups. That weekly trip to Starbucks is now a treat for me once or twice a month. And diet soda – oh so bad for you! – is slowly starting to leave my life.

5. Get an exercise routine down

Three times a week for at least 30 minutes get your heart rate elevated! You don’t have to sweat through 6 layers of clothes like some Crossfit junkie you know but go on a walk, bike ride, or play in the backyard with your kids. I like to do a home workout with my kids present. Walking around the neighborhood to explore with them and switching out different strength training exercises is fun for us to do together. Example: We walk around the neighborhood in one direction (I let the kids choose) for 15 minutes, then return back home. Once we’re home I do 20 squats holding the baby. Or lunges over the kids. My kids personal favorite is to have the baby crawl on my back while doing push-ups. Other days, we just go on a long walk or bike ride with the dog to get out some energy and burn some calories.

The most important part here is you need to be realistic with yourself. Perhaps you start doing this 80/20. 80% of the time you stick with organic and healthy and then 20% of the time you allow yourself some freedom (in moderation). Now that doesn’t include the diet. For me, if I allow myself a “cheat” day, it’s all over and all of my hard work is undone (or it’s two weeks later and I am kicking myself for hopping off the wagon). If unhealthy food is seriously an addiction for you I would highly suggest a food cleanse to help you move past those sugar and refined carbohydrate addictions. Once you get past that initial change, it’s all downhill from there! By making these changes a way of life you’re committing to your health and wellness in the new year and beyond!

Keto Friendly Pumpkin Donuts

As the seasons change and winter draws closer, I am still dreaming about pumpkin goodies. I’ve made quite a few delicious foods with pumpkin before and love what a great alternative it is to oils and butter in my recipes (although I’m not one to knock oil or butter!). It just brings a richness to certain dishes and a delicious flavor. Plus it’s full of fiber and vitamins! One thing I’ve missed since changing to a LCHF lifestyle, are the pumpkin muffins, waffles, and donuts I make every year.

I decided to jump in and start recreating my favorite high carb pumpkin recipes into a lower carb option. I have to say, I’m pretty pleased with the results! While these donuts are a little dense, they have the pumpkin flavor I’ve been craving and pair perfectly with a cup of coffee! I could eat them with or without the frosting. And if you’re not a fan of salty with your sweet, omit the pumpkin seeds on top or chop them smaller!

Keto Friendly Grilling Meals- Hatch Green Chile Chicken Drumsticks

So it’s been a little over a month since I’ve switched over to a low carb high fat lifestyle (LCHF) and I’m starting to get the hang of things. I’m a bit obsessed with experimenting in the kitchen and love to find great meals that I can tweak. One of my favorite recipes to make over and over again is mashed cauliflower. I don’t know why… maybe it’s the heavy whipping cream and butter? Yeah, it’s definitely the heavy whipping cream and butter!

But I can’t just eat mashed cauliflower for dinner. Or serve it to the family. They might riot.

This weekend I was doing my grocery run sans kids (yay!) with coffee in hand (double yay!) and I headed down the marinade and sauces aisle. It’s one of my favorite aisles to peruse for help for dinner. Not only are there plenty of lower carb/sugar options, but they help make tasty meals in little to no time. This time around I found a delicious green chile marinade in Stubbs Anytime Sauces. Paired with the Foster Farms drumsticks I picked up on sale, I was ready for grilling!

Keto Friendly Grilling Meals - foil wrapped asparagus Keto Friendly Grilling Meals Mashed Cauliflower with Butter

One thing I love about grilling, even in November, is that I can prepare just about anything on the grill. What’s not to love about a full meal being cooked outside while I don’t have to dirty up the kitchen? Less dishes in my sink. With the help of some foil, I was able to cook up the asparagus and the cauliflower right on the grill along side the drumsticks as they cooked.

And? It’s perfect for tailgating meals too. When we head out to watch our team play on the field when they’re here in town we love enjoying a meal on the grill before heading into the stadium. Or when we’re hosting family over to watch the game on TV. Grilling makes it easier for us to host our family and enjoy time with them while they’re visiting with us.

Hatch Green Chile Chicken Drumsticks

  • 1 jar Stubb’s Anytime Sauces in Green Chile
  • 1 package (24oz) Foster Farms Fresh & Natural Chicken Drumsticks
  • Olive Oil

Place the drumsticks in a 9×13 baking dish. Pour Stubbs Anytime Sauces over chicken. Cover dish with saran wrap or lid and marinate for 4-24 hours.

Preheat grill. Grab a paper towel and blot with olive oil. Rub on grates to prevent meat from sticking.

Once grill is heated, add drumsticks to the grill. Barbecue for 30-35 minutes or until completely cooked.

Let rest for 5 minutes and serve with veggies.

Simple Holiday Bento Box Ideas

Simple Holiday Bento Box Ideas

My kids have fallen in love with bento boxes (affiliate link). I started making them when I started packing my lunch (even though I work from home) and they look forward to seeing what I’m going to pack them next. Gone are the days of wanting the same thing for lunch every.single.day like before.

Now I’ll be the first to admit that I don’t do elaborate bento boxes for my kids lunches. Instead, I choose one thing to make special or cut up and then the rest just goes with the theme of the bento I’m doing. And I always include foods my kids will actually eat. Because even if the baby eats seaweed, the big kids refuse it.

Luckily coming up with simple holiday bento box ideas isn’t difficult. And when you really get down to basics like I do, you can turn just about any classic lunch into a cute bento idea. Just grab a protein, a snack, some fruit and a few veggies and you’re on your way to an awesome bento lunch for your kids.

You can find these simple ideas featured today on Bentgo’s blog.

Top 5 Questions To Ask the Orthodontist on the First Visit

My baby is growing up. And that means starting to do big kid things like visit an orthodontist for the first time. This post sharing our questions to ask the orthodontist on the first visit is sponsored by WildSmiles Braces.

Top 5 Questions To Ask the Orthodontist on the First Visit

My oldest is quickly approaching age 7 and I do not know where these years have gone.  From watching him get his first tooth, to just recently losing his fourth, and everything in between there’s one thing that doesn’t change. That amazing, radiant, toothy smile. It’s something I get to see everyday and I am so blessed for it. And he’s losing teeth left and right now – two more are becoming more loose only shortly after he lost his fourth (and first front) tooth.

We started taking him to the dentist at age 18 months. He had most of his baby teeth come in by then and they all seemed to have come in correctly so we weren’t too worried. Just like anything that has to do with our children, the perfect time to see the dentist ranges from 6 months after the first tooth appears to after 1 years old. And some people wait until later then that. Now that we’re pass that stage and focused on how his adult teeth are coming in, one thing is clear. His obsession with his thumb will mean heading to an orthodontist sooner rather than later.

Preserving My First Car For My Son

And as I recently found out, age seven is an excellent time to have your child evaluated for the first time by an orthodontist. This is the age when the first permanent molars and the incisors should have come in properly. And at the rate my son is going with losing his teeth, he’ll probably be ahead of the game once he reaches his 7th birthday. But why go to an orthodontist?

Orthodontists are braces specialists that do not treat regular dental patients. They receive 2-3 years of specialty training after completing dental school and have a more efficient system to produce excellent results. This makes the braces treatment cost lower, especially if you consider the shorter time in the office. Orthodontists often offer affordable payment plans. Plus the cost of braces varies little these days from community to community so one of the important factors is to find an orthodontist you feel comfortable with.

Early evaluation allows for proper diagnosis and treatment, if necessary, of possible risk factors. Orthodontists can determine if there are any problems that may develop in the future, giving the parent and doctor an opportunity to plan future treatment. The American Association of orthodontists recommends age seven for the first orthodontic consult. So we’re planning for our first visit early next year. And that means research. Making sure we’re going to the best orthodontist for our family and we know what to prepare for and ask at that first visit.

Thumb Sucking

Here are a few things to ask on that first visit:

Top 5 Questions To Ask the Orthodontist on the First Visit

  1. Does my child have any missing or strangely shaped teeth?
  2. Do the jaws and teeth match with each other?
  3. Will my child benefit from early treatment? Why?
  4. Will my child require complete orthodontics later? Why? When?
  5. Do you have university orthodontic training after your dental school graduation?

Once you’ve visited your orthodontist, check out WildSmiles braces! WildSmiles is the first and only proven corrective appliance that allows patients to design their custom smile. With specially designed orthodontic brackets that come in a variety of fun shapes including Stars, Hearts, Sports Balls, Footballs, Flowers and Super Diamonds, WildSmiles is available nationwide to moms and kids. Plus? They’re available online!

Back to School Healthy Checklist

As we head back to school, I wanted to share this back to school healthy checklist, sponsored by Kinsa, as a way to keep everyone healthy over the first few weeks back in the classroom.

Back to School Healthy Checklist
I feel as if sickness has been coming through a revolving door this summer. We all get better and then WHAM! something else hits. From colds, to ear aches, and runny noses, our family has been hit with it all. And now that I’m sending the kids back to school next week, I need to make sure I’m doing everything I can to stop the cycle in this house.

We’ve been working on trying to keep our home sickness free and I’ve come up with a checklist for the kids so that they’re reminded of what to do to stay relatively healthy. Since the first weeks of school mean exposure to a whole new lot of kids, an a whir of germs, we want to be in tip top shape when we return. And that doesn’t just mean staving off illness, it also means doing routine check ups that may help prevent illness.

Back to School Healthy Checklist - what to do

Back to School Healthy Checklist

  • Wash, wash, wash your hands! Keep reminding your kids to wash their hands frequently throughout the day. I have my kids hum happy birthday two times when they’re washing (similar to how they brush their teeth) so that they wash long enough. Make sure your child’s immunizations are up-to-date. I’ve found that a lot of classrooms have hand sanitizer that they use but since my daughter has eczema, hand sanitizer burns her.
  • Medications and Allergies need to be mentioned to your child’s school. If medications are needed during the day, make sure the school has what they need (with prescription/note from doctor if needed) and that they know of any allergies or conditions that your child may have. We had to make sure my son’s inhaler was ready to go for the new year! You might also want to mention any allergies to the room mom, if you have one, just in case.
  • Keep emergency contacts up to date! Make sure that the school has the correct emergency contact information for your child. A contact may have moved or changed phone numbers over the summer.
  • The most important meal of the day! Plan to give your child a delicous and healthy breakfast before leaving in the morning, such as oatmeal (made in a rice cooker!), smoothies, yogurt with fruit or scrambled eggs.  This will provide much-needed energy for the day. A great make-ahead option for busy mornings are these delicious egg cups!
  • Buy your child a comfortable, ergonomic backpack with thick straps. You don’t want the stress of a large load of books to hurt their shoulders or back.
  • Make sure that your child’s shoes fit properly so that they get the support and comfort they need for all-day wear. With kids growing so quickly, make sure your child knows that they should speak up if their shoes are getting tight or their feet are hurting. My son grew 1.5 shoe sizes over the summer! Talk about a growth spurt.
  • Has your child had a vision screening? This will ensure that he/she can see the board in class and will help with writing and reading.
  • Schedule a dental checkup to ensure that your child’s teeth are in good condition to start the new school year.
  • Concerns about hearing or speech? In the first few weeks of school you can bring your concerns to the teacher to see if they observe anything in the classroom. Or have your child’s doctor observe and make recommendations.

And the #1 way to keep everyone healthy: Keep your child home when they’re sick! Let them rest and recover so that they feel 100% and the illness doesn’t spread. A sick kid won’t be as alert and ready to learn. They’ll be much more comfortable resting at home.

Kinsa Thermometer

But sometimes illness is inevitable. And having the right tools in the medicine cabinet is important. And Kinsa has those tools.  Kinsa has built something truly revolutionary for parents – the first smartphone-enabled thermometer designed for your peace of mind. Kinsa automatically remembers fever, symptoms, medications and notes for each child or family member, and helps you take action when fever and symptoms are cause for concern. Users can also join groups for their child’s school to see the “health weather” of the school and know what symptoms and illnesses are circulating.

And even better? They’re giving back to the community in a huge way. With their new FLUency program, Kinsa is choosing 100 deserving schools this fall and providing all families in each school with free Kinsa stick thermometers ($30 value). To nominate your school email fluency@kinsahealth.com. You can learn more by watching this video here.

Creating a Workout Routine Post Baby

It’s hard to believe that my little angel is 7 weeks old already! Over the past few weeks we’ve been able to find a new rhythm in our home now that we’re a family of 5 and I’ve been using the tools I have on hand to make life easier. One thing I’ve found difficult is finding the time to jump into a new workout routine.

For some reason now that I’ve taken over school pick up and drop off from my husband and mother-in-law (they were saints for taking the kids to and from school over the past 6 weeks) I’ve found that I have even less time during the day to work. And that means less time to workout as well.

So I’ve had to analyze our new routine and make a few changes here and there to ensure that I’m not only getting my work done and meeting deadlines but also taking care of myself as well. Because if I’m not taken care of, how will I take care of the family, right? [Read more…]
