Strawberry Mango Cream Pops

  • 1 cup strawberries, hull removed
  • 1 cup mangos, sliced
  • 1/2 cup a2 Milk®
  • 2 tablespoons honey

Blend all ingredients in your blender until smooth. Grab popsicle molds and fill to fill line. Make sure not to overfill! Place molds in freezer and let set overnight. Remove molds from freezer and enjoy.

I don’t know about you but Daylight Savings Time is really kicking my butt. I’m pretty sure we’ve been late to school drop off every day this week and for some reason I just can’t adjust as easily this time around as I have in years past.   • 1½ cups quick cooking oats
  • ¼ cup packed brown sugar
  • ¼ cup white sugar
  • ¼ cup melted butter
  • 1 cup Vanilla creamer
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • cooking spray

Preheat the oven to 350 degrees. Spray a 9 x13 baking dish.

Mix all ingredients in a bowl then spread out evenly in the baking dish.

Bake 20-25 until the edges are golden brown.

As a busy mom of three, I need quick and easy breakfast ideas for those mornings that just don’t go a smoothly as I plan. So at the beginning of the week, I take a look at our schedule and figure out what days might be the hardest to squeeze in making breakfast. Whether it’s a day I’m also making lunches, or a day we have to leave earlier than normal, I want to be prepared and do what I can ahead of time to make our mornings easy.

On those days that I need to plan ahead for breakfast, I’ve started to make these delicious overnight oats the night before. Not only are they simple and easy to make, but they are so versatile! Plus, with a2 Milk® I don’t have to worry about tummy trouble after eating them!

The kids love the taste and I love the simplicity! Plus, there’s minimal ingredients and almost no mess (unless I give the baby some without watching her). And when I put them in mason jars, the kids can bring them with us in the car if they didn’t finish breakfast at home. Easy peasy!

Strawberry Vanilla Overnight Oats with A2 Milk

Strawberry Vanilla Overnight Oats

  • 1/2 cup quick oats
  • 1/2 cup a2 Milk®
  • 1/2 cup strawberries
  • 1 teaspoon vanilla
  • 1 tablespoon sugar

Wash the strawberries and dice them up. Add them to a small bowl. Pour vanilla and sugar over the strawberries and stir until well coated. Let macerate in the fridge.

While the strawberries are working their magic, grab a mason jar, the oats, and a2 Milk®. Pour 1/2 cup of oats in the bottom of the mason jar. Top with milk. Then grab the strawberries and pour 1/2 into the jar. Save the other 1/2 in the fridge.

Screw on the mason jar lid and store the jar in the fridge overnight. In the morning, remove lid and stir up with a spoon.

Microwave for 30 seconds if you’d like to remove the chill from the oats. Top with the remaining strawberries and enjoy!

There are no poisoned apples here, just deliciously good apple muffins that are the perfect treat for breakfast or whenever.

Apple Granola Muffins with cinnamon

Apple Granola Muffins

  • 2 cups flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 cup buttermilk
  • 2 eggs
  • 1/4 cup butter, melted
  • 2 apples, grated
  • 1 cup granola

Preheat oven to 350 degrees.

Mix together dry ingredients in a large mixer. Add wet ingredients to dry and continue mixing until well combined. 

Using a rubber spatula, fold in apples and granola.

Coat a muffin pan with non-stick spray. Scoop 1/4-1/2 cup of batter into each well of the pan.

Bake for 15-17 minutes or until a toothpick comes out clean.

Life is crazy right now. Work, volunteering, kids, life. It’s all just overwhelming sometimes. But this year I’m focusing on being more organized. I update my Google calendar with everything going on, even if it’s just a quick 5 minute meeting before or after school. And I try to plan ahead and stick with a routine.

We’ve gotten mornings down to a science. Wake up, brew coffee, make lunches and breakfast while stealing sips, get kids dressed and fed, and nurse the baby while checking email before heading out the door to drop off. I even call out a 5 minute warning so the kids know they need to get their shoes on.

But we’re still struggling with afternoons. Between meetings and soccer practice and everything else in between, I try to keep everything written out so that as we’re driving to school I can give the kids a heads up on what to expect after they get out of school. Most days they come straight home but others are spent at after school care or they’re picked up by a relative.

With all of the craziness that our afternoons bring us, I have to remember to pack snacks for the kids and hide them everywhere. Because if I don’t? This is what I have to deal with:

1. Bowl Of Fruit –

Now I know this sounds like a duh kind of idea but I’ve found that putting a bowl of fruit out on the table or counter puts the responsibility of eating in my kids hands. They know when they feel hungry that all they have to do is go grab something from the fruit bowl. Plus fruit is portable so I can grab a few pieces before heading over to pick up the kids so they can snack on the drive home.

I keep a variety of fruits on hand to satisfy both of the kids tastes. And if they don’t eat it fast enough,  I turn the fruit into muffins! Another awesome snack choice that doubles as a breakfast food.

2. Snack Drawer or Shelf

In the pantry I have a snack shelf filled with great snacks that the kids can grab on their own as soon as they come home from school. This shelf is also used for my go-to lunch items too so I can quickly go in and grab what I need after I finish making sandwiches and grabbing fruit.

  • Ham & Swiss Roll Up – pita, sliced ham, sliced swiss cheese | Add some spinach leaves and a spread of ranch dressing or hummus
  • Tuna Roll Up – bread, tuna, mayo | Add some diced celery and dill pickles

4. Cheese Platter

Now don’t laugh but sometimes I just cut up some cheese and open up a package of crackers and call it a day. We even turn to that as a dinner option on crazy busy nights with the addition of some salame or pepperonis. Cheese platters are very versatile. From delicious brie and gouda with fancy crackers to string cheese and gold fish, the possibilities are endless. And when you’re having a bad day, both pair nicely with a glass of wine. For the parents… not the kids.

Going into 2016 you want to start leading a healthier lifestyle! This means so much more than just eating healthy or losing weight. In order to achieve your goals to be healthy in 2016, you have to have a healthy mindset and the right setup to make it work. Below we list the easiest 5 things you can do in order to be healthier in 2016. This doesn’t necessarily mean losing weight (although it could be that) but being healthy is more than just a number on a scale. Having a healthy mental state, a good routine, and the right tools is the best way to set yourself up for better health. This may not be easy but it’s worth a shot! If you fail, pick up the pieces and try again. Even if it takes you all year to figure out how to lead a healthier lifestyle. And always remember: Everyone’s path looks different!

So here are some simple ways to improve your health and wellness in 2016

5 Easy Way to Be Healthier in the New Year

1. Routine

Start your day off right! Every morning wake up and do a simple routine. Mine usually consists of washing my face, then I drink a glass of water infused with lemon oil or a squeeze of fresh lemon for immune and digestive support. Finally, I sit with my cup of bulletproof coffee and set a positive intention for the day. For me, this means meditating in my faith and going over my daily affirmation (I share these daily on Facebook). This was super easy when I didn’t have kids but now in order to do this, I must wake up a bit before them to get enough time to start my day off right. And you know what? Some days it just doesn’t happen with kids but I try to make certain it does 80% of the time. However, if your kids are overrunning you for a week straight, give yourself some grace! Being a mom is not an easy job.

2. Cut out chemicals

Try and research affordable alternatives to cleaning and household items you use in your home. Cutting out chemicals improves your health drastically and increases your longevity. Before we started using Thieves household cleaners we used homemade cleaners with vinegar, distilled water, baking soda, and tea tree oil. It was 1/100th the cost of buying cleaners at Target. But that doesn’t mean you have to make your own cleaners or purchase from an essential oil distributor. There’s also no problem with purchasing the ready made cleaners already on store shelves.

3. Cut out processed foods

For many this is difficult to do because many foods have become more like addictions. That may seem extreme but it’s very true. You may even consider changing your lifestyle like I did to reset your system to not crave refined sugars every day. It’s a hard transition, and some even come down with what’s called keto flu, but you feel amazing after! So amazing that you never want to go back to how you ate before. Cutting out refined foods, carbs, and sugars, is very simple and the easiest way to boost your metabolism and set yourself up for a healthy life.

Try not eating foods that come in a bag, can, or box. Anything with a long list of ingredients you cannot pronounce is good to avoid. Instead of cereal for breakfast, try eggs, sausage, and some spinach. If that is too much to make on the go try some bulletproof coffee. You’d be amazed at how full you are from one cup of coffee For lunches try a nice big salad with meat and a handful of nuts or a lettuce wrapped burger! For dinner stick to protein and veggies. For the kids you can serve a healthy carb like sweet potatoes, brown rice, or quinoa. It takes a little planning but in the end it will become your way of living.

4. Cut out sugary beverages

Soda, juice, lattes, milk, tea, Gatorade, diet sodas you name it. We stick to coffee, water, bubble water (La Croix), and sometimes 100% juice (for the kids). You’ll be amazed at how much this improves your energy throughout the day and helps you shed pounds fast! (side note: tea bags are okay here I’m talking about teas that come in a bottle from the store that have 45 grams of sugar in them). The biggest thing to do is look at labels. See what you’re consuming and how much sugar or carbs are in the drinks you’re enjoying. That doesn’t mean giving up lattes completely. Consider subbing almond milk or heavy whipping cream instead and asking for sugar free syrups. That weekly trip to Starbucks is now a treat for me once or twice a month. And diet soda – oh so bad for you! – is slowly starting to leave my life. 

5. Get an exercise routine down

Three times a week for at least 30 minutes get your heart rate elevated! You don’t have to sweat through 6 layers of clothes like some Crossfit junkie you know but go on a walk, bike ride, or play in the backyard with your kids. I like to do a home workout with my kids present. Walking around the neighborhood to explore with them and switching out different strength training exercises is fun for us to do together. Example: We walk around the neighborhood in one direction (I let the kids choose) for 15 minutes, then return back home. Once we’re home I do 20 squats holding the baby. Or lunges over the kids. My kids personal favorite is to have the baby crawl on my back while doing push-ups. Other days, we just go on a long walk or bike ride with the dog to get out some energy and burn some calories.

The most important part here is you need to be realistic with yourself. Perhaps you start doing this 80/20. 80% of the time you stick with organic and healthy and then 20% of the time you allow yourself some freedom (in moderation). Now that doesn’t include the diet. For me, if I allow myself a “cheat” day, it’s all over and all of my hard work is undone (or it’s two weeks later and I am kicking myself for hopping off the wagon). If unhealthy food is seriously an addiction for you I would highly suggest a food cleanse to help you move past those sugar and refined carbohydrate addictions. Once you get past that initial change, it’s all downhill from there! By making these changes a way of life you’re committing to your health and wellness in the new year and beyond!

But adult coloring books with beautiful intricate designs and themes for grown-ups to sit down and color with. With this craze comes a little bit of sanity for those who hop on board. Since so many of my girlfriends have expressed an interest in adult coloring books, I was pleased to host this adult coloring party for a few local blogger friends with the help of Prismacolor Premier® products last week. It was a wonderful morning filled with great conversation, good food, and relaxing coloring for all. I don’t remember the last time I sat down to color but I’ll be doing it a lot more frequently now that I’m hooked!

Tips for Hosting An Adult Coloring Party

1. Fun and Easy Food

When I host get-togethers for the girls I always have one homemade item, and then the rest store bought. Not only does it make things easier on me as I get ready for things but it also allows me to focus more on the guests the day of because I’m not running around trying to finish up making this or that.

For this event, I chose to make a delicious egg bake with bacon, cheddar, and broccoli. I picked up a cinnamon pecan pull apart bread from the store and made a festive fruit and cheese tree with cubed cheese and grapes. The tree was very easy to make. I added two mandarin oranges to the top as a tree topper and the bottom as a tree stump and then added pretzel crisps to the last layer to use with the cheese for snacking.

The egg bake and pull apart bread were served on the main buffet spread and the fruit and cheese tree was set out on the dining room table so we could munch as we colored. Who doesn’t love to munch along as they color and visit?

2. Drink Options

Mimosa bars are perfect for morning get-togethers! They pair perfectly with the breakfast foods I was serving and guests can choose to either pour a mimosa or just drink the juice. For this simple mimosa bar, I grabbed a few glass juice carafes and some champagne glasses.

I paired together orange juice and cranberry juice to bring more color to the spread. As for the champagne, I grabbed my favorite local almond champagne. And some non-alcoholic sparkling grape juice for the non-drinkers.

Grab a few gift tags and Prismacolor Premier markers to make name tags for the drinks!

Hot Cocoa Bar

Another great addition to any brunch or evening event during the winter months is a hot cocoa bar. It adds a little sweetness and some warmth to the event. Plus there are so many fun additions and toppings one can add to their hot cocoa to make it personalized to their taste. Grab a pot of coffee to add to the mix so guests can make mochas too!

I chose to use my single serve coffee machine and some hot cocoa cups I had, however, I’ve also made a delicious batch of slow cooker hot chocolate in the past with this recipe for a little adult fun.  I’ve also passed out these cute hot cocoa snowmen as gifts and favors at parties before.

3. Adult Coloring Books + Colored Pencils

And, of course, for the star of the event, adult coloring books are a must! Each guest should have either a few adult coloring print-outs or a coloring book of their own to enjoy during the event. Pair with Prismacolor Premier coloring pencils and you have the perfect outlet for moms to relax, de-stress and re-energize during the often-stressful holiday season.

In the living room and the dining room table I put a few coloring books out with packs of Prismacolor Premier colored pencils. I also used a roll of butcher paper as table runners for both the coffee table and dining room table so guests could doodle and find out what colors they wanted to use.

Coloring together allows friends, families and co-workers an opportunity to take a moment together to reflect and reenergize, sparking creativity and inducing productivity. It’s a relaxing way to reconnect with each other. We enjoyed chatting around the table about work, life, and everything else in between.

1. As I mentioned previously, I have a stellar gingerbread cookie recipe that can be used any time of the year. And you don’t just have to make gingerbread men (and women) if you don’t like! This is great for ornament cookies, various shapes, etc. And the results are a fabulously soft and chewy cookie that’s amazing. Don’t believe me? Try it for yourself!

4. And then there are the cute, mini gingerbread cakes from Made With Happy. Just thinking of them makes me happy! So festive and perfect for parties. The drizzle of icing makes them even more irresistible.

5. What isn’t better with banana? Living Sweet Moments paired it up with gingerbread wonderfully in this banana gingerbread recipe with brown butter glaze. Sounds just as good as it looks!

6. I love a recipe that can also serve as decor as well. And who wouldn’t want these cookies perched on the edge of a mug or added to a place card. 7. One of my favorite things to make for guests when they come to visit for brunch is french toast casserole. Not only is it super simple to make, but it uses up the leftover bread I might have around that won’t get eaten. How awesome is that? Now it isn’t overly sweet, so if you prefer something on the sweet side, I suggest whipping up some cream cheese frosting.

Chocolate Peanut Butter Walking Taco Dessert

Since having our youngest, my daughter Molly has been feeling a bit left out. She is starting to show a little jealousy and really just doesn’t know why she isn’t getting all of the attention like she once did. In an effort to make sure she knows just how much we love her and enjoy spending time with her, I’ve been trying to go out of my way to make special moments with her. And now that the holidays are upon us I’ve had to make extra effort to find those little moments in our day.

As a fun experiment I decided to pick up a few things from Walmart while she was at school to make an after school snack she’d love. Since we normally save sweets for after dinner, she’d be excited to have dessert after school. Norah and I had a fun time finding all of the ingredients we needed for our chocolate peanut butter walking taco dessert.

Haven’t heard of a walking taco? Neither had I! But I have been eating them since I was younger and just didn’t know they were called something specific. I don’t know about you but when the ice cream man came around our neighborhood we didn’t always get ice cream. Most times we would get a bag of chips (whatever we decided) and the ice cream man would open the bag and pour in cheese. We’d get the same thing at lunch time and sometimes for breakfast when I was in high school (along with a sugary soda to wash it down with) although instead of chips I remember choosing flaming hot cheetos most of the time.

Well I guess  someone decided to start adding more to their chips and created a walking taco you ate right out of the bag. However they were a bit smarter and used a fork to consume their deliciousness. We just used our fingers and licked off the excess cheese. 

And now I’m making a spin on that walking taco with this walking taco dessert! Using a few simple ingredients I can create a delicious dessert that incorporates all of my daughter’s favorites: peanut butter, chocolate, and of course whipped cream! And making these walking taco desserts in the Go-Paks! means no mess or leaks so it’s easy to take on the go. She just needs a spoon and she’s set. 

Here’s how I made it: 

How To Make A Peanut Butter Chocolate Walking Taco Dessert

Chocolate Peanut Butter Walking Taco Dessert

What you need: 

  • NABISCO Go-Paks! NUTTER BUTTER Bites Sandwich Cookies
  • Snack Pack® Pudding Cups in chocolate
  • Reddi Wip Original

What you do: 

1. Open the Go-Paks! and empty out 1/2 of the cookies inside into a seperate bowl (save one on the side).

2. Open one Snack Pack® Pudding Cup and scoop 1/2 of the container into the Go-Paks! on top of the cookies.

3. Top the pudding off with some Reddi Wip Original.

4. Repeat the process ending with the Reddi Wip Original and add that one cookie you saved on the side on top to share what’s inside.

5. Surprise your kid with a fun dessert treat!
